Can I please ask for your best (and easiest) menu ideas?

Due to logistics we can’t go out on our anniversary next week, so I have grand plans to make something nice. I’m a decent cook, but don’t want to be slaving over a stove all evening - so it would be nice if it could be something I could make in advance and bung on, or something straightforward.

We like most things, I particularly like cooking new things (hence not going with my tried and tested recipes) and he’ll probably help me (he’s no spoony fucker), so something we could cook together might work too.

All and any suggestions welcome! I’m failing to come up with anything.

We always have fillet steak on date night
If that's not your thing, maybe sole veronique or stuffed pasta shells, takes a while but v nice

We always have seafood as it's quick and we both love it

Seared scallops
Moules
Cold lobster salad
Crab brioche rolls

With some v good English sparkling wine

Shoxfordian, we do love steak, but it has often been our go-to meal. Good and easy though (and weirdly something I hadn’t thought of doing at all)

Proper stroganoff - fillet steak, Brandy, cream - takes about 5 minutes.

Starter: camembert - with ready made dippy stuff. Or I've just whacked puff pasty round it in a ring and baked. Maybe with bacon bits scattered into the puff slices.

There was a beautiful 7 hour lamb on the good food sight, sounds lots of effort but its 10-15 prep then in the oven / slow cooker on low all day.

I've done with all roasties etc.. but in summer a nice fresh salad, new potatoes, tenderstem broccoli maybe.

Pudding bake a brownie the day before, warm up for 5 mins in the oven and serve with cream and strawberries

My latest favourite is a simple Greek feast!:

Lemon and Garlic Roast Chicken (prep ahead then just chuck in oven)

Greek Salad (prep ahead)

Greek roast potatoes (can also prep ahead - just make it up until the potatoes go in the ‘broth’ - www.recipetineats.com/greek-lemon-potatoes/).

For starter/nibble while cooking: toast a few pita breads for a minute then slice into strips and dip in homemade tzsatsiki (natural yoghurt with some grated cucumber, chopped fresh mint, crushed garlic).

Ooh, stroganoff sounds amazing, but lamb might be the winner. I’ve got a lovely joint in the freezer I could use. I love baked Camembert too. Maybe I should just get nice bread and cheese and wine and gorge on that. He would be more than happy!
