Very simple delicious lemon dessert please?

We are in Spain and our garden is full of lemons. I’d make lemon delicious pudding (self saucing) but you have to whip egg whites, and I don’t feel like doing that with a fork. Assume limited ingredients available, and it’s over 30 degrees. Any suggestions? I’m a decent cook and a little fussy, but a thread not so long ago about super easy show piece desserts and lots of them sounded amazing so I’ve high hopes (& I’ve pinned them!)

Make real lemonade - guessing it's lemon juice, sugar and sparkling water plus gin.

Lemon posset sounds good. I made a dessert years ago that was cream, lemon curd and limoncello and it sounds a bit like that, but more 'from scratch' as in you have to combine the sugar and lemon first, but the same sort of idea.

Grab some cream/soft cheese/icing sugar/biscuits and make a cheesecake?
