I am having a foodshop brain fart. Come and inspire me with what you are all making over the weekend

I need to go shop for food for the weekend. I am doing 5:2 so no fasting over the weekend but trying to eat healthily. DH eats anything really and won't be too fussy but doesn't like very spicy food. DD2 is at home having finished uni. She doesn't eat beef and prefers spicy, veggie/fishy food. She can cook and will help out but she is out at the moment and i don't feel inspired. Help me!

Lentil and vegetable moussaka. It's absolutely amazing. My son's favourite.

Roast chicken with salad and pittas tonight, salmon with noodles tomorrow and meatballs on Sunday as I need something quick I can make before we go out so it’s ready to go when we get home.

BreconBeBuggered · 12/07/2019 14:19

You could get some wholewheat tortilla wraps and pack them with spicy vegetables, then have sour cream, cheese, guacamole etc on the side for family members who'd prefer a few more indulgences. Maybe a few potato wedges or a bit of Mexican rice for anyone who's hard to fill.

crustycrab · 12/07/2019 14:24

Warm salad bowl with salmon. New potatoes, tender stem broccoli etc

CakeNinja · 12/07/2019 14:32

Prawns and chorizo this evening with a rocket and avocado salad.
Tomorrow we are all out but for lunch I have got some bread, meats, olives and cheeses as have a friend coming round.
Sunday will be either a roast or a bbq, probably a whole chicken however it will be cooked.
Do and dc will have potatoes etc with theirs!

Apolloanddaphne · 12/07/2019 15:15

Thank you. We are having Thai chicken curry tonight, turkey mince bolognese tomorrow and a salmon and new potato bake thing on Sunday. Thanks for the other ideas. I will be using them!

We are having this tried and tested favourite

feelingverylazytoday · 12/07/2019 17:23

Just had spinach and poached eggs on toast, making lentil curry with spinach tomorrow, enough to last for 2 days. Apart from that will have cheese/ egg/ humous sandwiches with salad.

StCharlotte · 12/07/2019 18:21

DH is away this weekend so it's ready meals and jaffa cakes a-go-go in this house (No DC).

Frith2013 · 12/07/2019 18:32

We’re having a campfire tonight so hotdogs and marshmallows!

Tomorrow might be salmon fillets and lots of veg.

Sunday might be a broccoli and macaroni cheese.

Frith2013 · 12/07/2019 18:34

I’ve also started off a batch of yoghurt so we’ll be eating that all weekend with fruit from the garden and honey.

Mac47 · 12/07/2019 19:12

Home alone tonight, so wine and crisps in front of a film. Tomorrow, think we are going to try Sabrina ghayour's baked halloumi with harrisa and honey as the main event with something middle easterny salad wise. Sunday, assuming left over salads, will do some fish or prawns to go with.

Apolloanddaphne · 12/07/2019 19:17

Gosh @thenightsky that recipe looks lovely but it is 800 cals per portion! I don't think it is compatible with my healthy eating plan right now.

These may not help because of the calorie content but I’ve been shopping this morning and this weeks meals are

Pizza or hotdogs
Chicken, ham and leek pie
Roast beef
Jacket potatoes with tuna mayo or cheese and beans with salad
Bacon, mushroom and courgette pasta
Fake kfc chicken, wedges and corn on the cob
Sausage, mash and veg

The pasta and fake kfc are both slimming world recipes

BentBaastard · 12/07/2019 19:28

Pasta with homemade pesto, buffalo mozzarella and tomatoes

Peanut butter chicken with rice and poppadums

Bbq

dementedma · 12/07/2019 19:31

Tonight was just a huge plate of salad with tuna, olives, hard boiled eggs etc. Tomorrow may well be the same...or stuffed peppers. I think a BBQ is planned for Sunday. Hate bloody BBq’s But unusually have a lot of family around at the same time, so might be easiest if weather is nice.
