I managed to get in a pickle with my foodshop! Usually very good at meal planning but they didn’t have a couple of key ingredients and then I came home and realised some other stuff desperately needs using up. I hate throwing food away but i’m Struggling to tie it all together!
I’m cooking for 1, ideally need 3 x dinner and 2 x lunch that I can reheat. I can freeze any leftovers.
1 very ripe avocado
A bit of Parmesan that desperately needs using
1/3 of a jar of pesto
Broccoli
Bok choy
Runner beans
2 x aubergine
2 x courgette
Mushrooms (need using soon)
Chorizo
Eggs
Potatoes
Cheddar cheese
Onions
Garlic
I have well stocked cupboards and following meat in the freezer;
Chicken thighs
Turkey steaks
Sausages
Chicken Kiev
Tortilla wraps
I don’t eat fish and am on a diet so relatively healthy ideas please! I can buy extras but would rather not buy many as done my main shop and the corner shop is expensive! Any ideas?
