Cover letter advice

Posted here for traffic. I'm applying for a job I really want and want to make sure I have a decent cover letter. Obviously I will address the person specification but should I do that explicitly (as in, in list form - here is the quality, here is how I meet it) or just in general letter format?

I seem to have less luck getting interviews since I had my son three years ago so I just want to make sure my cover letter skills are honed. Has anyone got any good examples? I'm always paranoid about making them too long as I work in HR administration and I HATE receiving long cover letters.
