I’ll start 🐷

My son made Mary Berry’s Simnel Cake for me yesterday.

It’s the most delicious, perfect thing.

Light, moist fruit cake with a layer of marzipan running through it. Slightly darker on the edges for a little bit of chew while at the same time being in no way over cooked.

Marzipan layer and marzipan balls on top.

If you like fruit cake and marzipan I urge you to try it. Honestly it’s the most gorgeous thing. My mouth is watering again just thinking about it 😳

So - describe your favourite cake to me. Sell it to me. Make me drool 🤤😁

Madeira (sponge) cake very very fresh - even still slightly warm from the oven - and not too sweet.

Madeleines: I love their shape and one is exactly right with a cup of tea

Made this at the weekend and it was lovely. Adjusted the recipe - we only have two sandwich tins! - and used creme chantilly for the filling with a coconut and pineapple glacé icing.
Delia Smith's stem ginger cake is great. I usually use lime icing.

btw`I didn't bother with the passion fruit drizzle on the passion cake. It's already moist.

Oh yes and:
*. Fruit scones (eaten on the day of baking) either alone or with a thin slice of mature cheddar
*. Really cheesy cheese scones (split whilst warm with a slice of good ham inside)

  • Welsh cakes, toasted, and enjoyed with a good hot chocolate made with added cinnamon and nutmeg

Oh dear: I'm finding low carb really hard! ☹️

Hummingbird cake is the food of the gods. Pineapple, banana, pecans - like a tropical version of carrot cake.

I made this almond and lemon cake on Saturday and I have to say it was fab. I used medium eggs, not large, absolutely fine. Very light and moist.

Not a cake, more of a dessert...
Nectarine and mint pavlova.

Chewy meringue topped with vanilla cream, sweet nectarines, toasted almond slivers, chopped mint and drizzled with a syrup made from your favourite tea. I use rooibos or lady grey.
