Sorry.

Here is recipe.

7" tin non stick. Coat bottom liberally with Demerara sugar. Place pineapple rings and dot glacé cherries around.

In one bowl mix:
4oz flour
4oz caster sugar
4oz marg
2 eggs
Splash of milk
With a hand mixer, when combined whack up to full speed for exactly 2mins.

Spoon over pineapple carefully.
Oven for 30 mins

When skewer is clean, remove from oven and leave in tin for a few minutes then turn onto plate.

Must be done whilst quite hot so Demerara can add shine.
Leave to cool.

Recipe is from my lovely but militant neighbour. Imagine nigella in 20 years mixed with fanny craddock (without the eyebrows)
I adore her.

Takes me back to primary school dinners - the desserts were always the best bit, and I always used to get massive helpings because my aunty was a dinner lady Grin

Mine didn't have a nice glaze like the two photos - they both look fab. Thanks for the tip about taking it out of the tin while warm, will remember that next time. I want to make another one now...

I haven’t made an upside down cake in a long time. They look delicious and I might have to make one next time we have our elderly neighbours around.

My mum used to make a chocolate version with hot chocolate sauce. Best pudding ever!

It's a favourite in our house served with cream.
Here's one dd made last week.
I love the individual cakes.
