What do you do with left over roast beef?

I’ve got a lot of left over roast beef. I want to do something with it but have no inspiration....

So ladies what do you do with your left overs?

Eat cold, thinly sliced, with pickles and fried potatoes.

Dice finely, add some fried onion, diced mushrooms and a small amount of gravy, make into pasties with shortcrust pastry.

Dice with leftover vegetables, make into cottage pie.

I love my Ddog, but I don't think there has ever been a time when she has got anything other than the trimmed off fatty bits. Actual meat can always be used up in a curry or just a sandwich. Anyway, it would make her farty I'm sure.

Eat cold with jacket potatoes.
Anything else is a waste if there are some lovely rare bits left, but otherwise
Cut up small and make cottage pie
Cut into strips and add to stir fried veg and a jar of teriyaki sauce

Ok so it was a really large piece of meat that I managed to cook perfectly rare on Sunday.

We had people to lunch and as my motto is ‘never knowingly undercatered’ I cooked a lot of stuff and had a lot of left overs.

My husband left at 5am on Monday morning so I’ve done what I can with it in sandwiches but there’s still loads left.

If i casserole or curry it I can make it last until Friday when the husband back and then I won’t feel like I’ve wasted any of it....

You can freeze it as is. I will often mince left over beef and freeze in portions, then use for cottage pie, lasagne, spag bog etc, or in fact anything you'd use minced beef for. However if it's really yummy, rare and tender it usually gets gobbled up in sandwiches, salads etc.
I now really fancy some rare roast beef...

Like Luci we freeze back all sorts of bits of meat, mince etc. Every now and then we gather it all together and make a big pot of chilli - beef, chicken and pork (lamb is a bit odd). Lasagne sauce too, but mainly a chunky chilli!

But with pefect rare beef, we'd have had sandwiches and/or beef chips and beans out of it first - that being our regular Monday meal - Sunday roast meat, chip, beans and a thick slice of bread!

I spread it with creamed horseradish, roll it up, then eat it.
