Will my bolognese be OK?

I had just brought it through the boil and left it to simmer when I had to go out suddenly and turn off the hob.

The meat was browned and there was a lot of liquid in. I'd been gone about 3hrs- am I ok just to heat it up and get going again?

I'd heat it up really hot on the hob again and Chuck the rest in. If I was not eating it all tonight I would get it in the fridge asap after cooking.

Thanks. Boiled it over again and it tastes okay, it's simmering again to thicken it. I'll let it cool and put it in the fridge for tomorrow.
