Veggie slow cooker recommendations and ideas

Hi

I’ve posted this on the food/recipes board but thought there might be more traffic here. I have bought a slow cooker in the sales- I’m vegetarian and live alone and work long hours sometimes so love the thought of coming home and dinner being ready but I’m not sure where to start. I would like to buy a recipe book and looked on amazon and there are several vegan and veggie slow cooker recipe books but the reviews are mixed and many seem to be American so include ingredients that may be difficult to get. Does anyone have any recommendations for recipes or recipe books to get me started?

Thanks!

xx

This curry is delicious and serves two so you won't end up with loads of leftovers www.bbcgoodfood.com/recipes/slow-cooker-vegetable-curry

I love this lentil ragu. It's in the BBC Good Food slow cooker recipe book with exactly the same ingredients, except only 500ml stock.

Basically put everything except the lentils and stock in the slow cooker on low for 6-7 hours. Then add the lentils and stock, turn to high and cook for 1-2 hours until the lentils are soft. Depending how watery the tomatoes are, you might not even need 500ml stock.

Annoyingly lots of the recipes from their slow cooker book are on the website, but with "normal" cooking instructions and none for the slow cooker.
