I am generally a competent cook but frying eggs are my nemesis. Please give me your failsafe methods for egg frying!

It's one of those things that's seemingly simple but to do it well is actually a skill.

Room temp egg - they really don't belong in the fridge
Fresher the better
Heat pan and oil but not too hot, hotter side of medium
Egg ready over pan. With a small sharp knife tap - not too hard or you risk splitting yolk - to break egg
Straight into pan
Don't touch it until it starts to set
Use spatula to contain white
When almost cooked white flip for 5-10 secs
Flip back
Serve

Perfect egg whites cooked, yolk still runny fried egg 😉

Can do perfect fried eggs & pancakes almost every time

Cannot poach eggs if my life depended on it!!

Yay - well done op!

Seems we've found a new mn dichotomy - poachers v fryers!

@StubbleTurnips it's optional. It takes all sorts to make a world. Personally, I'm with @DrCoconut

Is use a mug so I can slide the egg into the pan at a shallow angle and not have hot oil splashing & spitting at me.

Top tip if you do use a mug - immediately fill with hot water after use so that nature's super glue is easier for you (or the dishwasher ) to deal with.

That's a lot of oil, *Longdistance"! Did you mean that? That's more like a deep-fried egg!
