Is Home Emergency cover a complete con? Every time I've potentially needed it they won't help because my situation doesn't meet their criteria (e.g. no water but I didn't know where the leak was). And even though I've bought it as a part of my main Buildings & Contents (Halifax), it turns out it's with a different company so Halifax just apologise and shrug their shoulders.

Don't go for the cheapest. You really do get what you pay for.
Lots of company's have cheaper cover options... don't do it, just pay a bit extra and get a good policy. Low budget prices tend to have surprising limits/exclusions.

I wouldn't say boring, but it can become very repetitive.
I've been fortunate enough to work across a few roles in claims... I couldn't imagine 10 plus years of just logging claims 😳

I think home emergency is very basic emergency cover and if you can add it only cheaply then I would probably do so but I wouldn't put myself out of pocket for it.
They are intended to help with the quick stuff, for example an exposed leak, boarding up... they won't do any investigation work.

Hmmm I'm not entirely sure on this one I'm afraid.
Claims and renewals are 2 completely separate things. Working in claims you have no access to a customers premium information, so I wouldn't really no much about trends/changes in that sense.
