I've never heard of it being possible for anyone to find out your current salary

OP when we ask for references we ask them to confirm salary. And if they've lied substantially then we would withdraw the offer.

If you've never heard of it being possible does that mean that we shouldn't be asking?

Most companies now only give a reference consisting of employment dates - it's very rare that they'd disclose what salary they are on.

On the flip side, we know the going rate and have benchmarked every position for us and know what our competitors pay and what we need to pay. In the 200+ hires I do, and the 1400+ our team do per year, I have never came across someone who has lied about their salary (at least not to my knowledge). I wouldn't dismiss a good candidate as they lied about their salary though.
