Stir fry.
Laksa soup with butternut squash. Jamie Oliver has a good recipe.
Frittata with potato, mint, peas, feta.
Baked potatoes.
Vegetable lasagne.
Vegetable stew with dumplings.
Panzanella.
Fajita wraps with peppers.

Definitely possible! Not if you’re family are as fussy as mine though Hmm:

  • shepherds pie (I make it with tinned, green lentils and veg instead of meat)
  • mushroom stroganoff with rice
  • vegetable curry
  • falafel burgers (there’s a really easy recipe on bbcgoodfood and I really like it)
  • lentil bolognese
  • pizza
  • veggie lasagna

Then how about a thick vegetable and lentil stew.

Or omelettes.

Grilled halloumi and vegetable skewers.

Any form of veggie curry
Vegetable (we use lentils, but any vegetables will do) cottage pie with sweet potato mash
Stir fry
Roast vegetables with halloumi and couscous
Mushroom stroganoff
Macaroni cheese

It does depend a bit on what you mean by 'family' meals - I recognise that a lot of these small children wouldn't eat - but if they're very young then you could throw some easier meals into the mix (beans/eggs on toast, soup and sandwich, pasta and pesto, omelette and chips)
