We are not veggie.
In the past week we have had (including 14 month old)
Pesto pasta with peas and corn mixed in
Roasted carrot and butternut squash risotto
Onion, mushrooms and cheese omelette with chips
Curried lentil bake
We also regularly eat vegetable and chickpea curry and rice (all spiced up- really tasty )
Jacket potato with beans and salad
Vegetable stir fry with noodles
Mixed bean goulash
Mushroom stroganoff with rice
Mediterranean vegetable lasagne

Thai veg curry or normal curry with beans/chickpeas
omelettes
macaroni cheese
Veg Faitas
Veg pasta with tomato and cheese or pesto
Topped Wedges (salsa/guac/hummus/salsa/sour cream)

Do veggie 'burgers' (that aren't made of TVP or quorn) count-as in the ones just made from veg or potato? 'Cause if not, those with chips/wedges/salad
Bean chilli
Jacket potatos with hummus /beans/bean chilli
Veg stir fry with butterbeans
Mushroom Stroganoff
Veg Stronanoff
Veggie pizza
Grilled mushrooms with mashed cannelloni beans
Noodle bowls with veg, sauce and butterbeans

Meals we have had recently:

Lettuce, pea and mint soup (lots of soups actually)
Vegetable quesadillas
Butternut squash and butterbean thai style curry (I also make a fantastic spinach and mushroom curry which is a Nigel Sclater recipe)
Beans on toast
Pizza
Huevos Rancheros
Pasta Arribiata (again, lots of possible pasta plus tomato sauce plus vegetable(s) options)
Omelette or quiche (asparagus or mushrooms are nice veggies in quiche)

Riverford has loads of good veggie meal recipes on their website if you are looking for ideas.

And adding to the cauliflower theme I adore Caulifloer pakora. But be warned, if you are making them you will consume approximately 10000 calories before you even sit down to eat. OMG they are moreish.

Pearl barley, courgette and tomato bake with loads of fresh basil, parsley and mint, mozzarella mixed through and a Parmesan breadcrumb crust.

Also delias couscous and roasted Mediterranean veg dish with feta. (Harissa dressing optional.)

Buy the River Cottage Veg Every Day, Delia Complete Vegetarian, Ottolenghi Plenty, and Madhu Jaffrey Vegetarian Curry Easy cookbooks. If you can’t find seven meals you can eat out of that lot I don’t know what to say to you*

I don't have money to splash out on multiple cookbooks but I'll try my library. No i don't think you eat that every night, I just joined a lot of vegetarian groups and they were all quorn, soy or tofu which either I don't like the taste or texture of, or give me a bad stomach. Also don't like eggs. I've been finding it tricky, but thanks for being condescending.

Tofu isn't a 'meat substitute'. There are tonnes of recipes online. Congratulations on your decision :)
