Hugh fearnley-whittingstall’s veg book is a good one op, no meat substitutes in it at all, there are some really good hearty salads in it, there’s one with puy lentils and parsnips that is amazing.

Lots of good suggestions on here, i like doing veg kebabs with halloumi, mushrooms, aubergines, tomatoes, onions, pepper etc with hughF-W’s home made flatbreads recipe, then if you google ‘kebab shop cabbage’ there’s loads of recipes for an authentic side salad.

Yes YABU op. How lazy.

There are about 40 hellofresh vegetarian recipes on their website that have step-by-step illustrated instructions. Maybe some less family-friendly than others but plenty of choice.

Veg In The Hole. It's just like Toad ITH, but instead of sausages I use coarsely chopped vegetables - it's up to you what you use.

My choice is onions, leeks, red green & yellow peppers and mushrooms - sometimes brussel sprouts too! Give the veg a short stir-fry in a wok, or similar, before adding them to a deep baking pan and pour in the batter. Then just cook in the oven. You could also add Parmesan to the batter mixture.

  • Leek & mushroom risotto - I use a few strands of saffron or a pinch of tarragon, & a small glass of white wine to give it lovely depth of flavour.
  • Quiche with broccoli, garlicky leeks, and/or sweet potato in. With salad.
  • Pasta with basil pesto, broccoli or peas & mozzarella.
  • Pasta with sundried tomato pesto, halved cherry tomatoes & a green salad.
  • Minestrone with basil pesto - I can't find the recipe I use anywhere online, I copied it from a book years ago & can't remember which it was. But it's distinctly tomatoey, similar to this one.
  • Fasolakia, I just have it with crusty bead & butter. I like to add carrot, handful of peas, a couple of shallots or some red onion, & do it in the oven on low to get all thick & rich, but light for summer.
  • This stuffed tomato dish. TBH I've had this one twice in the past two weeks. Sometimes I change it a bit; I use risi pasta, or giant couscous. Sometimes I experiment with the fillings a bit - I add pine nuts or a touch of pecorino if I am having 2 beef tomatoes, & leave out the potatoes (although they are very nice with it).

I used to be vegetarian, for many years. These were some of my favourite & most frequently eaten meals. Still are, actually.

Some of these have probably been mentioned but we often have

  • a Greek meze so humus, tsatsiki, rice, bread, vegetables and lots and lots of halloumi.
  • macaroni cheese
  • omelette
  • pasta with pesto
  • jacket potato with veggie fillings
  • little cheese and egg / filo pastries (although sometimes I add ham or bacon)
  • pizza

I have also tried soups which my children hated!

If I was trying to go veggie I'd also try veggie fajitas by not putting in the chicken. The children would get their protein from refried beans and cheese.

Red/ green Thai curry.

I find using usual recipes but just going mad with the amount of veg/beans/ pulses works.

I haven't read the thread because well, I'm lazy, but as a veggie myself these are my suggestions:

Tagliatelle with green pesto and peas
Vegetable chili and rice
Greek meal with pitta bread, hummus, Greek salad, tzatziki and grilled halloumi
Baked potatoes with coleslaw and grated cheddar
Home made veggie pizza
Vegetable fajitas made with colourful peppers and beans, with sour cream
In this weather, a cold collation - cold boiled eggs, green salad, pasta salad, wholemeal rolls and a cheese board

Lentil chilli with the usual kidney beans, mushrooms etc with rice/potato/pasta
Vegetable curry (could be chickpeas, any vegetable, sweet potato, butternut squash etc etc) poppadoms, samosas
Pasta with tomato & veg or lentil sauce
Pizza with variety of toppings
Roast dinner (nut roast)
Tofu stir fry with cashew nuts
Falafel, houmous, salad, bread, baba ganoush
Lentil shepherd's pie

PanPanPanPing - for veg in the hole I like a nice onion or two. I'm no longer vegetarian but I dont eat sausages. An onion about the size of a russet apple is just perfect, IMHO.

My two are rubbish at eating veg and are very into eating meat (I'm veggie), so any shared veggie meals in this house are fairly non challenging!
Stuff they'll eat without thinking includes:
Jacket potatoes, cheese and beans
Eggs, homemade oven chips, beans
Tin of mixed beans, tin of sweetcorn, a little passata and cheese, wrapped in a tortilla and baked (cheesy beany enchiladas!)
Homemade tomato sauce in a pasta and veg bake
Risotto with onions, peas, sweetcorn, asparagus, carrots
Mostly balanced meals, some of that is a little light on protein, but I'd worry about that more if they were eating mainly veggie food.
