I'd go for:

  1. Pasta pomodoro with grated cheese on top
  2. Humous and avocado wraps with iceberg , cucumber, carrot and red pepper sticks
  3. Home made pizzas with tomato, mozarella, onions, peppers etc
  4. frittata: chunky omlette with fried onions, potatoes, sweetcorn, peas and peppers, garlic and herbs in it, with a fresh salad
  5. Satay curry: peanut and coconut milk base with sugar snaps, baby corns, peppers, spring onions, sweet chilli sauce etc served with sticky rice
  6. Halloumi skewers: chunks of halloumi cheese grilled on skewers with peppers, onion wedges, courgette chunks etc
  7. Red lentil dahl and rice with roasted butternut squash and a bit of frozen spinach stirred into the dahl
  8. Tortillas: wild and brown rice with black turtle beans, swetcorn and fried onions stirred in, with a spicy tomato sauce drizzled on top, wrapped in floury tortillas and baked with cheese grated on top
  9. Veg chilli: brown rice and chilli made with a tomato, pepper, onion, courgette and mushroom (all finely chopped) sauce with sweet corn and kidney beans, flavoured with mild chilli, dark chocolate and oregano.

My DC eat all of this happily and they love meat.

Lentil bolognese, sweet potato spinach and chick pea curry, mushroom risotto, pizza, vegetable fingers and a jacket potato and peas, crusty bread and soup, veg lasagne, bean feast....

Homemade pizza
Pesto pasta (veg pesto obvs)
Homemade bean burgers in buns with homemade potato wedges
Roast with nut roast and all the usual trimmings
Scrambled tofu + broccoli and mushrooms
Curry and rice
Quiche ( I use tofu instead of eggs) with sun-dried tomato and broccoli and new potatoes

Easy! Then obviously if you use things like veggie mince, veggie sausage etc even easier!

Ooh I did it! Now to RTFT, and get some more ideas as we're not veggie but I'd like to do more veggie meals.

I've only read first page and most of my go-to meals are already covered. Throwing in:
Tortelloni stuffed with ricotta and spinach.
Huevos rancheros
Pizza
any of a thousand egg dishes.

This week,
Pasta with butternut squash sauce.
Egg fried rice with lots of veg in.
Couscous,summer veg and lots ofint and parsley.
Quiche,asparagus still in season with coleslaw and a tomato/cucumber salad.
Baked potato with beans and cheese
Lasagne,spinach or lentil bologanais(have bologanais in the freezer for lasagne,chilli,pasta or on potatoes)
Had bean burgers,marinaded halumi on skewers,bbqued sweet corn,bbqued peppers on the BBQ yesterday with usual extras.
We also eat lots of salad because it seems to have grown very fast ATM but appreciate not all families with small kids get to eat much and DD as a teen is only just mastering mushrooms.
Many of my meals are based on what I can cook in half an hour, preheat preprepared
food from the fridge or defrost after work and at this time of the year because when off I cannot drag my self from the garden.

Butternut squash risotto, macaroni cheese, 5 spice sticky linguine with veg, stir fry, bean chilli or burritos, chickpea curry, leek and potato bake. Sure some of these have been mentioned but some of my favourites.

Butternut squash pasta is delish (roast butternut squash with garlic) then blitz and add a herb (sage or coriander) and a cheese (Parmesan or a spread good)

Bbcgoodfood have an amazing black bean enchilada that’s is really easy

Cashew nut stir fry - toast the cashews first

The roasted tomato/garlic pasta on the Waitrose website - so easy but really tasty

Lentil cottage pie with baked beans

Chickpea and veg curry

Quiche - so many options

Bean chilli - make a batch and serve the leftover with wraps and salad as fajitas the next day

Not very exciting but my veggie daughter is a recovering anorexic who prefers non greasy, high protein meals

We don't eat meat during the week. Here's the meals in rotation in our house:
linguine puttanesca
fennel and rocket pasta
malaysian noodles with tofu
broccoli and pecorino penne
dal with naans
jacket potatoes
veg and noodle stir fry
omelette and chips (I like spinach and parmesan in mine)
macaroni cheese
courgette parmigiana

As you can see, cheese features heavily. What is life to me without cheese.

I haven’t RTFT but our favourite is cauliflower wing tacos.

There’s loads of receipts online but we like the hummus one. You basically coat pieces of cauli in blitzed oats and hummus and bake until it’s crunchy on the outside. Serve with sliced red cabbage, edamame beans, chopped cherry tomatoes, mini tortilla wraps and tex mex dips.

We try to have 3 veggie nights a week and I use her books more than most.

I've been trying to up our veggie meals too. My most successful so far have been
Butternut squash and chickpea African stew
Black bean chilli (best chilli ever apparently!)
Spanakopita- spinach and feta filo pie
Dhal- I do plain, spinach and my new favourite, carrot and coconut.
Quorn nuggets and chips are a meat substitute, but OMG they are delicious!!

What a weird question! What do you think vegetarian families eat? Pasta napolitana every night?
