Baked potato - with beans/cheese/cottage cheese etc
Spinach and ricotta cannelloni
Mexican bean fajitas
Veg quesadillas
Stuffed peppers
Stuffed mushrooms
Stuffed courgettes
Lots of soups - minestrone, carrot and coriander etc

www.olivemagazine.com/recipes/vegetarian/roasted-butternut-squash-with-goats-cheese/ - I leave out the red onion, breadcrumbs, parsley and parmesan, and I cube the butternut squash as I think it's easier to eat and cooks quicker.
You can use other cheese as well - mozzarella or halloumi are nice.

Onion soup is lovely. I use the Michel Roux recipe (just change chicken stock for vegetable stock).

Minestrone.

Ratatouille. Easily one of my favourite dishes. The Michel Roux recipe is amazing, but it does take some effort.

Soft tacos (tortillas) with refried black beans, guacamole and salsa.

Arabian Stuffed Aubergines

2 medium aubergines good and firm
6 tbs olive oil
4 cloves
2 bay leaves
1 cinnamon stick
1 medium onion. Finely chopped
4 garlic cloves, finely sliced
2 tbs tomato puree
2 tomatoes, finely chopped
½ cup pine nuts
½ tsp ground black pepper
2 tbs tamari
½ cup chopped fresh coriander

  1. Drop the whole aubergines into a large pan of boiling water, boil gently for 15 minutes. Drain and cool. Cut in half length ways. Carefully cut out the flesh into pieces, keeping the skin whole.
  2. Heat 4 tbs oil in a heavy based pan with the cloves, bay leaves and cinnamon. Add the onion, garlic, and soften for a few minutes. Add the tomato puree and cook for a few more minutes. Then add the tomatoes, pine nuts, pepper and tamari, along with the aubergine. Cook and stir for 5 minutes.
  3. Stir in the fresh herbs and pile into the aubergine skins. Place in a greased oven-proof dish. Drizzle with a little oil and bake for 20 - 30 minutes at 350 degrees F.

Serve with rice and salad

Spelt with tomato and parsley - more salady but also good for protein
Broad beans mixed with curry paste and tomatoes
Potato and leek soup

For protein, pick something that contains a pulse (ironically)!!

  1. Various Indian veggie curries (I can make 7/8 using spinach and paneer, or cauliflower, cabbage and potato, okra, plain potato and tomato, dal).
  2. Thai red or green curries with veg.
  3. Fajitas with peppers and mushrooms with homemade guacamole and mango salsa and sour cream.
  4. Veggie pasta sauce with lots of vegetables like peppers, courgettes and spinach. You can use it to make spaghetti or add bechamel and make lasagna.
  5. Risotto. With peas and lemon. Or butternut squash roasted with buttered spinach. Or mushrooms and cheese.
  6. A quiche with onion and tomato and grated courgette.
  7. A quick veggie stir fry. Or use leftover rice from the curries for a vegetarian fried rice with a fried egg on top if you eat egg.

Bean and vegetable chilli with rice
Sweet potato chapati with lentil dhal
Aloo gobi with rice
Coconut curry with root veg and peppers
Vegetable dhansak
Vegetable stew with veggie dumplings
Bean chili in wraps and baked and therefore enchiladas 😁 (skip the cheese on top, still delicious)
Olives, bread, oils, hummus, tomatoes for a nice lunch
Spanish omelette and salad
Mushroom, pepper and baby corn fajitas

You can substitute beans or peas or lentils for most yucky fake meat products. And if that doesnt work, use potato Grin

My kids also often have homemade hummus with pita with olives and tzatziki. And some roasted veg on the side. Followed by a large bowl of fruit. And a yogurt. This is more lunch/brunch than dinner though.

I'm slightly at a loss for why you're struggling!

Most veggie things I think of don't use meat substitutes. Especially the most obvious ones like pizza, tomato pasta dishes, curries, chillis, soups, risottos, nachos, macaroni cheese, egg fried rice, nut roast...

I am dairy free gluten free vegetarian (eat eggs occasionally) and never use meat substitutes.

Oh yeah forgot - baked eggs with spinach and tomatoes
Coddled eggs
Eggs, chips and beans

Eggs are a really good source of protein - much cheaper than the equivalent protein portion from meat.

I think I'd struggle to be vegan for that reason, although I'd probably find being veggie do-able.

Green couscous:

You can decide the amounts for your family but its:
Cook broccoli, blender it with some pecan nuts and fresh coriander. Add salt and pepper.
Cook couscous. Mix together. Add some olive oil. Add some whole/half pecan nuts for a bite. Serve. For some reason all the kids of my familymembers love this. We just don't tell them that it's healthy.

Veggie lasagna:
Make a lasagna. Alternate layers of red sauce mixed with cherry tomatoes with a layer of steamed spinach mixed with ricotta, pine nuts and garlic. Put some ricotta on topnand a few sliced cherry tomatoes because they're pretty Grin

Great recipes! We're vegetarian and I've been struggling with meals that work for my toddler who has a tomato allergy. I think I've managed 18 so far... three of them are quiche / flan though!

This week I am doing

  1. Potato crique (French potato onion pancake) with salad
  1. Noodles with peanuts, coriander, lemongrass, Thai basil, lime, chillies, sugar snap peas and pak Choi
  1. Frittata with new potatoes, peppers, feta, courgette, chives,
  1. Flatbread pizzas with tomatoes, basil, oregano, mozarella & olives, scattered with rocket after oven
  1. Tagliatelle with asparagus, lemon & egg
  1. Soup pistou, grilled baguette, soft cheese
  1. Cannelini bean salad with avocado, pinenuts, tomatoes, spinach, broad beans, rocket, baguette slices

Oh so many ! Get a proper veggie cook book / I am Indian and been vegetarian all my life - I could go weeks just with different kinds of curry’s , dale and rices . You can also have vegetable lasagna as we are today , vegetable noodles , pad Thai , vegetable stew , vegetable loaf, paella, vegetabke pie , spaghetti with vegetable balls - the list is endless

Spaghetti with butter and Marmite. Serve it with roasted tomatoes and rocket.

Loving this thread for all the ideas.I'm seriously wondering if I will find this absolutely wonderful or absolutely disgusting. Will try it when DH is away.
