When We stopped having meat youngest was 8 and she still wants to eat it.( I wanted to go veggie when I was carrying her but DH wouldn't allow it)

I might do a stir fry and give her chicken or give her real sausages or some meat on a Sunday. It's DH not liking pasta that causes more problems.

Is cauliflower steak marinaded in something or is it literally a sliced cauliflower?? I food process a whole cauliflower and it makes tons of cauliflower rice for a fraction of the price too.
Black beans are a revelation to me! Someone gave me a black bean chilli recipe. They are bloody delicious!

You could try a whole baked cauliflower, liberally coat it in a mix of yoghurt and your favourite spices, or a jar of readymade curry type sauce, cover with foil and roast.

Remove the foil for the last ten minutes of cooking to brown the top.
Serve cut into thick wedges, with a potato or tomato based side dish.

Why, @Megabeth? If you're cooking pasta for everyone, he can have something else. And your dh doesn't get to have the last word over what you eat, pg or not.

Not rtft but look up Simon Rimmers recipes the accidental vegetarian. His jerk spiced pumpkin pie is amazing! Other things we make are:

Dhal (really easy)
Mexican lasagne (tortillas instead of lasagne sheets, mixed beans and pulses and veg, spiced with paprika)
Polenta and cheese topped veggie pie
Veggie curries
Frittata
Baked eggs in tomato and veg
Mac and cheese

I think it's literally just a slice of cauliflower, although if you went to a restaurant where they made a bit of effort, you might get it marinaded and served with appropriate sides as part of a decent vegan or vegetarian meal.

M&S were ridiculed for their £2 slice of cauliflower earlier this year.

I suppose the logical thing to do with your cauliflower(s) would be to make a couple of steaks out of the middle and blitz the rest for cauliflower rice/cous cous, or put it in curry or a macaroni cheese (not sure if macaroni cheese with cauli, broccoli or other veg such as green beans baked into it has been mentioned yet.

Roasted cauliflower is indeed delicious and I think that the OP is now abundantly clear about the amount of normal food that just happens to be vegetarian there is available.

My favourites are:

halloumi/falafel/hummus/pitta/salad combos,
tortellini with pesto and grated courgette,
the macaroni cheese mentioned above,
spinach and ricotta caneloni,
pizza with peppers, onions, mushrooms and olives,
Spanish omelette and
paneer, chick pea and vegetable curry.

I'm not vegetarian and don't conciously cut down on meat although I've realised that I don't really like meals that are big pieces of meat with sides, or meat on pizza or with melted cheese in general, so if I eat meat, it's more likely to be something like paella or biriyani, that has small pieces of meat with rice and vegetables than steak and chips or chops and mash.

In 2014 he decided to give up meat, 8 year old and 10 year old were very fond of meat by then.

One of my favourite bases, can be eaten with pasta or rice. Add chili to pep it up. Or veg like grated carrot.

One of my favourite bakes
Soften a red onion and green pepper. Make breadcrumbs from a couple of bread slices, add in. Add in a beaten egg, handfull or more of grated cheese, a handfull of chopped parsley and some chili flakes or hot sauce. Put in baking dish, top with breadcrumbs if you want. Bake at around 180 degrees til set.

Rumbledethumps.
( sauted onion and cabbage mixed with tatties, covered in cheese and baked)

Mini omlettes made in muffin tins served with crisp salad.

Twice baked tatties- baked potato scooped out, mashed, spring onion and cheese aded, refill shells with mixture and bake until golden. Nice with green salad or other veg.

Croque monsieur without the ham

Butterbean casserole, saute an onion, then sliced courgette, add tin of tomatoes and tin of butter beans.

My veggie daughter's favourite is a roast dinner. She get extra Yorkshire pudding to make up for the protein she isn't getting through meat. Obviously I have to be careful not to use meat fat for the roasties and yorkshires and she has separate veggie gravy.

And I have just invented a delicious veggie dish. It starts with a bowl of tomato and red pepper ragout of the sort I'd use for a veggie lasagne. I chop up some halloumi quite small and soak it in boiling water until it softens a bit. Then I scramble an egg or two with the drained halloumi added to the eggs. Stir the halloumi and egg mix into the pepper ragout and serve on toast. It's gorgeous and no meat substitutes needed.

I had raclette for dinner on Monday - potatoes, onions, cheese, cornichons. Gorgeous. If I'd had guests I would have served it with a sale but as it was just me I just tucked in.

When you say meat substitutes do you mean Quorn instead of mince, fake bacon? Or would you consider the Bolognese I make with chickpeas and mushrooms (which does end up the texture of meat, well, almost!) to be meat sub?

Indian stuff is made for vegan/vegetarian meals.

I haven't ever used a meat substitute when baking veggie. We aren't a veggie family but rarely have meat. DS (11 months) favourite meals are:
Paneer tikka masala (as mentioned)
Courgette Lasagne
Moroccan couscous
Spinach & Broccoli cheesy pasta bake
Macaroni Cheese with grilled mushrooms
Sweet potato chilli (mix in sweet potato mash into sauce, really thickens it nicely)
Omelette

As a bonus, pizza!

It is melted cheese, often served with bread and potatoes. You need a raclette grill/machine and it works best with the right cheese.
Often served in Alpine France or in Switzerland.

You could make cheese on toast for a similar taste and combination of textures. Grin

Meat substitutes - quorn, TVP, vegetarian sausages & hotdogs, "bacon", "ham", etc. Not sure about tofu... but I'm not keen on it & shouldn't eat soya anyway so I hadn't really considered it.

There's loads really but I tend to use meat substitutes anyway as you get extra protein.
I used to be veggie (now a meat eater too- only McDonald's chicken nuggets thoughGrin)
Fish is always a great route- healthy, protein and cheap. (Buy it frozen).
