I do seven different veggie pastas, none containing meat subs, you just replace meat with vegetables and pulses.

Cauliflower and potato curry , spanish omelette , jacket spuds and beans , pizza topped aubergine , pesto pasta with green veg mixed in , dhal and rice , lentil lasagne , mushroom risotto , egg and chips , homity pie , veggie fingers waffles and tinned spaghetti , veg soup and crusty bread , homemade veggie burgers , falafels and salad pittas , mushroom stroganoff , quiche new potatoes and salad , stir fry veg in egg fried rice , chinese style veg curry , we eat a lot of veggie meals i prefer it

Veg 5 bean Chilli
Vegetable Lasagne
Egg, beans and chips with bread and butter!
Pasta with cheese sauce and broccoli and added veg
Pasta bake with courgette, aubergine, onions etc topped with cheese and under the grill.
Jacket potato with any of the above
Stir fry peppers, onions, mushrooms and chinese vegetables in ginger, garlic and soy sauce tossed with noodles.

Homemade vegetable soup
The list is endless isn't it?

Cheese, pea and mushroom omelette with side salad
Stir fry with noodles and a fried egg or two on top
Spag bol with mushrooms and lentil
Chili with cheese, guacamole and refried beans
Mezze platter -- hummus, feta, halloumi, grilled veg, olives, stuffed vine leaves, pita bread, tzatziki, salad etc.
Cheesy beans on toast or jacket potato
Vegetable curry (thai/indian/whatever) with rice. Paneer if indian (yum)
Sweet and sour veg with egg fried rice

Have a look at HelloFresh recipes online. You can search them by ingredient. They're quick, easy and always turn out well. I've just bought the cookbook, which is good too.

Nut roast , roast potatoes, yorkies, veg, etc
Quiche, potatoes, veg
Vegetarian chilli.

We eat quite a bit of vegetarian food in our house (was a vegetarian for 20 years though do eat meat now). I don’t think I’ve bought a meat substitute in about 5 years. Relying on pulses makes it pretty easy.

Creamy green lentil, mushroom and kale stew (this is my 5 year olds favourite meal)

Paneer or chickpea curry with rice

Lentil bolognese with spaghetti

Tortelloni soup (making this tonight and I do add sausage but you don’t have to)

Bean and sweet potato chilli is a favourite around here too

As is egg noodles with stir fry veg and scrambled egg

Veg and cheese frittata

Really loads of things can be made cheaply for a crowd with pulses and eggs.

Vegetable Tabbouleh

1 bunch cauliflower
3 tbs olive oil
1 tsp curry powder
2 bunches parsley
8-10 leaves fresh mint (optional)
1 medium onion
1 large cucumber
2 medium tomatoes
1/3 cup fresh lemon juice
1/4 tsp salt
1/4 tsp garlic powder or fresh garlic

  1. Cut cauliflower florets into uniform pieces. Put cauliflower into food processor and pulse to grate into uniform granules, about 1 minute.
  2. Heat 1 tablespoon of the oil in a 12-inch non-stick skillet or wok over medium-high heat. Add curry powder and cook until it sizzles slightly but does not burn. Add grated cauliflower and stir fry, turn until it is cooked, about 10 minutes. Remove from heat and cool.
  3. Meanwhile, rinse parsley and mint and trim and discard large stems. Chop into very small pieces.
  4. In a large bowl combine reserved cooked cauliflower, parsley, onion, cucumber and tomato.
  5. In a small bowl mix remaining 2 tablespoons olive oil, lemon juice, & salt. Pour over cauliflower mixture and toss to mix well. Serve at room temp or on chilled Romaine lettuce leaves.

These are our 'everyday' meals then I generally try to do something a bit more snazzy on a Sunday. I put a lot of chickpeas, lentils, peanut butter, cottage cheese and eggs in where I can for the protein.

Look up the Moosewood Collective Cookbooks. They're great for ideas. Veg society website if you need a Sunday dinner idea.

Ratatouille

1 small aubergine (about 1 1/4 pounds), cut into 1" pieces
1/3 cup olive oil
4 garlic cloves, pushed through a press or finely chopped
1 tsp salt
1/2 tsp dried rosemary
1/2 tsp dried thyme
1/4 tsp black pepper
1 medium courgette, cut into 1" pieces
1 yellow squash, cut into 1" pieces
1 small red pepper, cut into 1/2" pieces
1 small tomato, cut into 1/2" pieces
1 small onion, thinly sliced

  1. Sprinkle aubergine with salt; place in a colander and let bitter juices drain 20 minutes. Rinse eggplant and pat dry.
  2. Heat oven to 425º F. In a 10 x 15 baking dish, mix oil, garlic, salt, rosemary, thyme, and pepper. Add vegetables, toss to coat evenly with oil mixture.
  3. Cover dish with foil and bake 15 minutes. Uncover and cook 30 minutes more, mixing occasionally, until vegetables are tender and browned.

OP are you a cook? Obviously it’s harder if you aren’t.

Macaroni cheese
Pasta with tomato sauce and cheddar
Floured and fried haloumi with a rocket salad and quite sharp French dressing.
Lentil and cheese bake - easy and goegeous
Aubergine parmigiana. Bit fiddly, but worth it!
Pink Basgetti I (my kids’ favourite very quick meal and comfort food. I still make it for me or any (grown up child) who needs comfort. Happy to give recipe.

I have loads more! (I grew up a veggie so know this stuff)

  • Lasagne (lentils instead of meat)
  • Cottage Pie (as above)
  • Curry - chickpeas, tofu, cauliflower, anything, creamy ones with coconut milk or tomato ones.
  • Roast veg, cous cous and crispy tofu and/or grilled halloumi
  • Bean chilli and rice
  • Jacket potato, cheese and beans. Or whatever you fancy!
  • Pesto pasta with green veg - peas, courgette, broccoli, edamame beans, mangetout (delete as appropriate)
  • Roast dinner - roast pots, mashed pots, all the veg, stuffing balls, Yorkshire, gravy. You really don’t need a ‘meat’ bit.
  • Veg fajitas - peppers, mushrooms, onions, cooked with the spices, serve with salad, sour cream, grated cheese
  • Tomato and veg pasta bake with cheese topping
  • Puff pastry tart - tomato, mozzarella, pesto, asparagus etc, be creative, get the kids involved. Easy to cut into smaller ones and everyone can make their own. Serve with salad.
  • Home made pizzas (as above)
  • Mushroom stroganoff, with rice or mash potato.
  • Soup, nice bread and cheese.

A lot of these suggestions are low on protein - I'd not want to feed DH a low-protein item as a main meal because he'd be hungry again pretty quickly.

Mung Bean and Sage Cottage Pie

1 lb mung beans or aduki beans
3 lbs potatoes, scrubbed
2 onions, finely chopped
2 carrots, grated
2/3 tbs fresh sage leaves
½ pint milk substitute
6 garlic cloves
½ cup cornflour
1 cup apple juice
2 cups water of cooking liquid from beans
½ cup tamari
5 tbs olive oil
1 tsp ground black pepper
Sea salt

  1. Cook the beans for 45 minutes in boiling water, to which the garlic cloves have been added. Reserve the water for later use in this recipe if desired.
  2. Boil potatoes with their skins on until they are tender. Then drain and mash well, adding the milk and oil.
  3. Mix the corn-flour to a smooth paste with a little liquid, the carefully mix in apple juice and tamari.
  4. Saute together the onion, sage, carrots and pepper in olive oil, until soft, about 10 - 15 minutes. Add the mung beans, stir well and pour in the apple juice mixture and simmer, stirring until thickened. Tip into a greased oven-proof dish, top with the mashed potato and bake for about 20 minutes, at 425 degrees F, until just browned.
