that's our meals for the week. All done from scratch except for the pizza base...

Dinner tonight is going to be black bean and beetroot chilli with homemade guacamole and cashew sour cream! It's a favourite all round. I fry off an onion, red bell pepper and garlic (sometimes mushrooms as well if I have to use any up). Grate in ready cooked beetroot (3 or 4). Add cumin, smoked paprika and oregano and cook off a little bit. Then a tin or 2 of tomatoes, stock cube and some dark chocolate or cocoa powder. Simmer for a bit and then add tinned black beans, sweetcorn and coriander. Squeeze of lime.

Other meals this week have been mango and chickpea curry, veg pasta, green rice and roasted sweet potato, lentil shepherd's pie, Egyptian koshari, soup and garlic bread, bean burgers.

He decided he wasn't happy eating meat and not knowing what the animals were fed on.
It's quite amusing because he used to argue with vegetarians that they couldn't get enough protein and our teeth are designed to eat meat.
A takeway paneer curry sets him up for the week now. Grin

And No, I'm not happy about it as youngest DC could have been vegetarian from birth, she was breastfed a long time and used didn't eat much meat as a toddler but now she is accustomed to it.

I would love to go more vegetarian, and always scan these threads eagerly for new ideas. But the staples (which sound delicious to me) are chock full of stuff my son simply won't eat - risotto of any kind, dishes based around vegetables like aubergine, beetroot, peppers, mushrooms, leguminous curries and stews (he'll tolerate a green lentil salad, just, but moans and picks the meal apart, literally, if I do something like a lentil based lasagne or pasta sauce), cous cous. Also, when we're trying to reduce carbohydrate, pasta, rice and potato based meals (again, delicious but increasing protein, reducing carbs really works for weight loss, and my husband needs to do this, or buy new suits). I would love a list of veggie options that was high on protein (and didn't involve eating eggs five times a week), low on carbs and would tempt my son. Actually, I want a resident chef because years of attempting to find this particular sweet spot have come to naught. In our healthy weeks, I rely over much on chicken, frozen fish fillets and frittatas (because you don't want to eat too much red meat, and anyway, fussy son won't eat lamb or duck, but he will eat quail). In the weeks where I'm giving in, I fall back on spag bol, sausage and mash, potato dishes like dauphinoise, curries and then husband and I both feel sluggish and puffy.

peartree, get a good cookbook and tweak. Have you considered Quorn? And also, middle eastern dishes like Falafel, hummus? Vietnamese salads- fresh and vibrant with peanuts as protein or even egg whites? The main protein for us includes Eggs, Paneer, Tofu, Chickpeas, Black beans, kidney beans, Dals, cottage cheese. So Dairy/soya based and plant based. The options are endless.

Thanks for the suggestions, nails. I have 2 metres of cookbooks and I look online as well. Haven't tried Quorn. Falafel is high carb, and rather dry, I find. I love Vietnamese salads and soups with or without meat, but son won't eat them. Haven't tried paneer and I could definitely do more with tofu. The options may indeed be endless, but my tolerance for having meals that have been planned, shopped for, and prepared then rejected yet again in favour of instant stuffed pasta or fish fingers and oven chips, is not! The search continues.
