Week 2 - Summer Low Carb Bootcamp - How was week 1 for you?!

Hopefully you've all entered your weight in the Spreadsheet of Fabulousness and I hope that everyone managed a successful first week!

It probably wasn't the easiest week to start, what with the bank holiday, but never mind. It's a really good lesson that life and all its temptations will frequently get in the way.

Hope everyone has some sunshine today. It's perfect barbecue weather, and barbecue food is perfect for low carbing. And if anyone wants a good recipe, there's a lovely one for marinated chicken on the recipe thread

Ill be adding my weight to the spreadsheet later , but I have lost 1 kg:)
Dh not so successful but due to work stuff and having to do tasting etc.

I'm going to do uber bootcamp when it comes up( if that's the right name) and I have been managing to do Pilates and not just talk about it and imagine myself doing it- it doesn't work, sadly.

I haven't been able to post daily but am reading the thread as much as I can, well done all the losers and looking forward to next week:)

B: three scrambled eggs with butter and cheese
L: Tuna Mayo and salad with dressing
D: will be pork steaks on BBQ prob with salad again.

It's week 5 for me this week, lost nothing last week which I have learnt is quite common for weeks 4 & 5. I've lost 10lbs so far, my bad negative moods and my middle aged spread tummy (which I thought I'd be stuck with for the rest or my life) with it!!! I've gained a couple more bits of clothing which I haven't been able to wear because they were too tight, I just can't remember feeling so good about myself for a long time.

I just thought I would share my body stats with you, I don't possess a tape measure, but I do have a weighing machine that measures, body fat, water, muscle and weight. When I started this woe 4 weeks ago my body fat was 28.1% it is now 25.9%, muscle was 25.2%, it is now 26.2%, water was very low at 40.2%, it is now 41.9%. There have been times when I have weighed myself and I have not lost any weight but I have lost body fat, so ladies please do not be disheartened if your scales say you haven't lost any weight, you are losing something, you are losing body fat.

Leoleebs: re Greek yoghurt, in book camp light there are loads is possibilities. My faves are:

Yog plus cream, vanilla essence and peanut butter

Walnuts, toasted coconut (unsweetened) berries

Frozen berries , mix and turn into icecream

Berries plus flaxseed mix

Almonds and almond butter

Yesterdays meals -

Bacon & mushroom ommlette

Broccoli & bacon soup (was delicious!)

Slow cooked pork (Nigel Slater recipe), pork crackling, vichy carrots (small amount for me), mange tout & baby corn


Today -

Bacon & fried egg in coconut oil

Aubergine melts

Smokey pork burgers, coleslaw, salad leaves

Smalline, I didnt lose much in weeks 3/4/5/6! Then it started coming off at a great speed again (I have LOADS to lose!). You are doing fab!

Just finished my lovely late BBQ lunch!

chicken marinated in lemon and garlic
lamb kofta kebabs
lightly smoked salmon with lemon and parsley
home-made coleslaw
BBQ courgettes
salad with homemade French dressing

I am stuffed and happy. the only thing missing was a large glass of prosecco! But I'm working this evening anyway so not much of a miss.

Got up quite late so brunch was buttery scrambled eggs and tomatoes.

Enjoy the sunshine!

Thanks black. Do you have the recipe for your soup sounds yummy.

The milkshake thing sounds good only got the naughty nesquick one in. Know I'm not supposed to but it's either that or fail and I can't. Going to centre Parcs in 8 weeks.

Thanks for adding the recipe, I tried making a broccoli soup which was really not nice, maybe adding bacon will cheer it up somewhat. I'll head over to the recipes section and have a look.

Down 1lb - which is fine for me as I have less than a stone to lose now.

I even survived the 2 day village festival without touching the fabulous homemade cakes. I sat there happily eating my ploughmans (without the bread, obv!) not feeling too deprived.

B: omlette with asparagus and pancetta

L:picnic in park so grated celeriac, mixed with mayo and bit of vinegar, crumbled in blue cheese, avocado and hard boiled eggs

S: hunk of chorizo

D: chicken breasts cooked in mushrooms and cream with celeriac crisps and spring green.

Thank you. If you do a stir fry what do you use as a sauce. Looks like my satay or home made sweet and sour is out.

4 lb down this week, I'm really pleased . DD is making a chocolate cake and I'm not even interested in licking out the bowls although I am worried about the state of the kitchen.

leo, make a lower carb satay. I use coconut cream (or coconut milk) peanut butter (sainsburies basics is only 3.4g carbs per 100g) and curry powder. Tastes fab!

Or make a chinese sauce, using soy sauce, sesame oil, chinese 5 spice, ginger & garlic.

1lb for me. Not bad considering a sugary, alcoholic 2 days. I am going to be really strict now, my weight must start with a 1 and a 4 by the beginning of June. That is 9lb in just under 4 weeks
