Week 2 - Summer Low Carb Bootcamp - How was week 1 for you?!

BIWI · 06/05/2013 09:19

Hopefully you've all entered your weight in the Spreadsheet of Fabulousness and I hope that everyone managed a successful first week!

It probably wasn't the easiest week to start, what with the bank holiday, but never mind. It's a really good lesson that life and all its temptations will frequently get in the way.

Hope everyone has some sunshine today. It's perfect barbecue weather, and barbecue food is perfect for low carbing. And if anyone wants a good recipe, there's a lovely one for marinated chicken on the recipe thread

Well, as it's the last day of Bootcamp, and nuts are allowed as from tomorrow, I suppose they are OK!

I'm going to keep on with bootcamp for awhile and see how it goes so I guess that also means I should skip them for the moment then. Grin

Phew. Survived today's big family and neighbour BBQ bonanza invasion relatively unscathed. As I was catering most of it was able to have plenty of low carb options available like the most enormous bowl of salad known to man and made far too much coleslaw.

Had a delicious lamb leg steak with boerwors - south African sausage made from beef and pork mince seasoned with coriander with salad and vinaigrette and coleslaw. BBQ followed my parents office warming party and I didn't have a single crisp or nut or biscuit or anything. Two weeks ago I couldn't have said no to a crisp!

For pud I made a low carb choc cake and served it with cream and ice cream and strawberries. I had half a slice of the cake and three strawbs (ds then ate one and a half of them) with cream. Cake was dark choc, eggs, butter, ground almonds, coffee and splenda. Want to find something better to sweeten it with when I make it for my birthday in august. Qnd the best thing was that I managed to give doggy bags of carbs and cakes so there are none left in the house.

Had a bit of White wine and realise that I haven't actually missed it that much.

So what could have potentially been a blow out was very successful.

Will see what the scales say tomorrow.

Well this weekend has been a bit rubbish food wise.

Saturday -
B - 2 x pork belly slices from the night before
L - pork scratchings
D - beef medallions in gravy - all I managed to eat whilst at a fundraising event I was helping to host

Blush

Sunday - (have a hangover)
B - 2 egg, 2 bacon and a big pile of mushrooms all fried in butter
L - 2 big slices of Edam cheese with 2 slices of ham, wrapped around coleslaw and cucumber and lidl Greek yoghurt for pudding
Pork scratchings, 3 spoons of peanut butter, some smoked sausage and several handfuls of Brazil nuts
D - dunno yet

Blush

Terrible - processed and dairy heavy, hardly any vegetables or salad and very very lazy.

Will be back on course tomorrow. Honest guv.

Well done, ZimboMum! Flowers

That cake sounds lovely.

Doshusallie - well the food is reasonably OK, so you should be alright. Let's face it, you could have fallen into a pile of carbs after last night, and you didn't, so well done for that Grin

I've been perusing Rose Elliot's book again today, and I'm going to try a couple of her recipes next week. One for tarragon, almond and pecorino tart, and another for 'mockeroni' cheese, which uses tofu - something I haven't cooked with before. So I will report back on those.

Ahhh. I didn't realise how much I loved coconut oil. We ran out last week and stoically decided to wait until the weekend to buy more.

I've just had back-to-back cups of peppermint tea with a spoonful of my lovely coconut oil in each.

Very true oh wise and wonderful BIWI.....cooked pizza for the boys lunch today and how I didn't scarf a slice I will never know. What stopped me was knowing how much bread make my stomach hurt these days.

Well the vit c and magnesium appear to be working! Feeling much less bunged up thankfully.

Lovely dinner of chicken breasts stuffed with mozarella wrapped in bacon courtesy of Sainsburys with a lovely salad of leaves, herbs, cucumber, cherry toms and avocado. And a big Sunday night treat of....................

Balsamic vinegar on my salad! With lots of olive oil.

And gallons of water.

I'm going to continue with bootcamp too. As I had four days off really last weekend I feel I only really started on Tuesday. Even with my week on bootcamp before that. I need a full two weeks bootcamp for sure. If not more!

Still deciding what to do on my birthday on Wednesday. Will stick to plan and maybe have some strawberries and champagne as a treat.

whats the difference in BC and lite? Is it just that we can have berries and nuts?

Report
BIWI · 12/05/2013 21:16

Cider - ditch the balsamic it is way too sweet, full of sugar and high in carbs.

Jax - yes, you can eat some fruit (berries) and nuts, and can have some alcohol. Rules are on the spreadsheet.

sorry BIWI, I realised it was on spreadsheet of loveliness after I hit post.

Going out for my birthday meal Thursday, will be good I think, its Indian food.

I know it's not ideal BIWI - hence the big treat that it was. It's the only thing I have had in a week that I shouldn't really. Not worried about it triggering cravings as I have been ok so far. I think I had two tsps. I had much more olive oil to balance it a bit.

JaxTellerIsAllMine · 12/05/2013 21:46

The pub where we go to for lunch regularly puts bloody balsamic on the salad, regardless of what other ingredients they use. Now that I know this, I will always say no balsamic. Chefs use it willie nillie! Grin

I am going to do a mixture of BC and lite next week and continue that way as I think I am doing very well so far. I have also found some delicious scratchings from Waitrose called Awfully Posh. They are lovely so going to be my 'treat' if I fancy something crunchy. To be honest I havent been that hungry the past few days it seems, which is supposedly a good thing. As long as I have a proper breakfast I am ok for a while.

Got a busy day tomorrow so must have food in the morning, otherwise come 11 I could stuff anything in my mouth. Blush

someone asked about the parmesan chicken recipe, it's very simply strips of chicken breast dipped in beaten egg (I use 1 egg for 3 breasts and that does 2 portions), then dipped in a big heap of grated parmesan (use a microplane grater) and fry in butter. I fry at high heat to get the pieces crispy and pour on any left over egg/cheese. Remove from pan and let cool on kitchen towel. Good hot or cold.

Very interesting info about exercise - I found a really old pair of jeans today and tried them on excitedly thinking they would fit well but they were totally tight and uncomfortable. Must have put on the few lbs I lost, perhaps from starting exercise? I am really enjoying my 10 min solution blast off belly fat even although I am pretty useless at the exercises. DS1 thinks I am training to be a wrestler and joins in - cute!

anyhoo, 6 weeks to go, will have to be extra strict. Bikini beckons Shock

B: 2 hb eggs mashed with butter
L: veg soup with hm pesto, cauli cheese
D: chicken curry, cauli rice, chili cabbage

Just checking in before bedtime.
B bacon and mushrooms
L unexpectedly out for lunch but had cheese and mushroom omelette with salad. Unfortunately it was drizzled with balsamic vinegar but other than that lovely
D shepherds pie with celeriac mash for me and potatoes for rest of the clan. They all had double chocolate cake with cream and I just didn't want it enough! It was all synthetic and rubbish so I didn't bother

Checking in! Not too bad a weekend, dinner with friends out last night was chicken wings followed by an enormous burger with cheese, bacon and avocado - gave DP's friend the roll! Did have a couple of gins though. Then eggs this morning and lunch at the pub - smoked duck salad with celeriac remoulade, was delish though did have a couple of thin slices of apple in it. Pork chops and cauliflower cheese for dinner, and gallons of water. Fingers crossed for a loss tomorrow, yesterday morning it was 4lbs and I don't think I've gone too mad... Will mostly stick with bootcamp I think though looking forward to me previous bootcamp light treat of frozen raspberries and cream!

Good morning ladies, just weighed myself and one whole and exact pound down. So total loss of five pounds over two weeks. I will start my exercise from today, will do couch to 5k and shred. I also have gym membership so will see if I can do something there couple of days a week.

Thank you for all the inspiration. Oh I will do a couple of days bootcamp light as I have great looking fresh mulberries in the fridge. I will check carb content first and then devour.

Report
warzonemummy · 13/05/2013 05:04

Just checked mulberries have 14% carbs so I should only have a tiny handful.
