B. Lemon,prunes,apples and apple juice/water, ginger ground linseeds o/n smoothie
L. Ryvitas with pnut butter\yeast spread and carrot endive shallot salad with mustard dressing. Dark Choc drops
S. Mushroom soup made with leftover veg/stock from Sunday. (We're soo lucky here the eco people in the town have banded together to recreate a mushroom farm in the caves just up the road from us and are dselling them here and in the local markets! There was a light mushroom growing industry here in the 50s.

Today

B: overnight oats with raspberries and flaked almonds
L: toasted protein bagel thin with PB and kimchi, cucumber sticks
D: sticky soy and sesame tofu with steamed rice and broccoli
S: dates, Kit Kat, 2x dark chocolate digestives - back in stock in Tesco after months of being unavailable. Yay!

Yesterday:

B: porridge with sultanas, seeds and soya milk
L: green soup with more seeds
D: gnocchi, baked in tomato, spinach and chilli sauce with (oatly) cream cheese
S: apple and PB

L: Thai pineapple fried rice with broccoli and a few extra cashews
D: rose harissa chickpea stew with crusty bread
S: Christmas cake, salted cashews

Yesterday
B: porridge with raspberries, flaked almonds and soya milk
L: sourdough toast topped with left over rose harissa chickpea stew
Friends round for dinner - vegan richa's Tex mex baked rice with tortilla chips and all the Tex mix accompaniments. Pineapple upside down cake and custard. Bendicks mints

Pub lunch with friends - root veg pie with chip, peas, carrots and gravy
S: lentil cakes with lots of oatly cream cheese and chilli jam, cherry tomatoes. Leftover pineapple cake and custard

D: large salad, burger in a wholemeal bap with cheese/gherkins/jalapeños, sweet potato fries and hm coleslaw

D: melt in the middle "fishcakes", chips and peas

Today is looking like...
B: tofu scramble with tomato & mushrooms on toast with some left over this isnt bacon that needed using up
L: not entirely sure yet, many options I the freezer that can be pulled out and nuked.
D: "chicken" korma with rice and naan

Other meals on the menu this week -
Sausages, mash and veg
Jacket pots with various toppings
Burgers
Spag bol

@LittleBlueBrioTrain I have a jar of tamarind paste looking at me with reproach 😂 Will see what recipes I can find, but pad Thai might be the way to go

D: puff pastry toad in the hole, garlic potatoes, roast carrot/cauliflower, broccoli, peas and gravy

L: Meera Sodha’s Burmese mango salad (it was immense. I’ve never made it before but I’ll defo be doing it loads in the summer)
S: Protein shake (I’m having a late dinner so I thought I’d have one to keep me going).
D: I’ve prepared some lentil bolognese that I’ll have with pasta.

D: butternut/tomato/cannellini bean/rosemary traybake with crusty bread and butter
S: crisps/salted nuts

Yesterday
B: sourdough toast with peanut butter and kimchi, dates
L: small freezer portion of saag aloo shepherds pie, Christmas cake
D: courgette/chickpea fritters, roast tomato, mushrooms, spinach and avocado
S: trek bar, chocolate cake bar, crisps/salted nuts

@PartTimeDomesticGoddess no noodles. The peanuts make it very filling and nourishing. Love the sound of your squash tray bake.

@vincettenoir I've added the mango salad to my (long) list of bookmarked recipes to try 😂
The traybake is also a Meera sodha recipe. I prefer cannellini/rosemary, reduce the salt and add a bit more wine (also find it's 3 portions not two). It smells incredible while it's cooking too 😋

B: cereal and soya milk (cereal is the surreal brand, high protein which is why I bought a mix pack to try them - I've only tested the cocoa ones so far and I prefer them dry)

Typical day

Porridge with sultanas, cinnamon, apples, and added ground seeds for extra protein.

Lunch is usually avocado toast with different toppings and a bit of leftovers if any. If not, will usually add in chips, etc

bean/lentil/tofu curry with flatbreads/chips/ quinoa or veggie whole what pasta

Hey I'm back where are the rest of us? This silly old computer is showing me the first thread I started in 2020 fgs!!! lovely to hear from you singleorigin and vince.

talking about coffee we, esp. dh, are coffee freaks, I try to keep my consumption to about one or 2 every other week because I noticed that I seemed to need MORE to taste it when I was drinking it every day. It was interesting to cut down; I lost weight and I could taste it better when I did drink it!

B Finish of smoothie with figs,apples, ground linseeds and lemon O\n soaked.
L. Parboiled then baked carrot/parsnips, with tamari and olive oil,horseradish dressing. steamed chopped cabbage with shallots,garlic etc. Some accidentally vegan dark choc buttons
S. slices of spelt toast with Pnut butter and scraped on yeast spread.

Yesterday was

Porridge with mixed seeds with apple and banana

Flatbread and avo for snack for the adults

Lunch was airfryer tofu and Rick stiens carrot, cabbage and coconut stir fry with quinoa

Snack was dates, tea and berries

Dinner was vegan lasagna with green lentils

B. Pear,fig,pomelo o/n soaked in apple juice and filtered water then added ground pumpkin seeds smoothie, few pecans and walnuts
L. Baked hm Carrot/parsnip linseed loaf with shallot/endive/ salad with horseradish dressing. Warmed H/m chocolate/ginger/walnut brownies with nutmilk.

How is everybody? Our son in law said there's a shortage of veg, in Sainsbos (they live opposite one!) I hope you're coping with seasonal veg!!
