Thanks for the suggestions! I ended up doing the burgers anyway as ran out of time to do anything else but I will definitely try the salad and the soup in future.

This week's dinner plan:
Thai red curry with rice / greens
Couscous and caponata
Leftover Thai red curry with rice / greens
Buddha bowl with smoked tofu and sweet potato
Beet burgers & miniature potatoes
All day breakfast - home made chips, tomatoes, mushrooms, spinach, beans
Leftovers Friday

I just read this page and Theodore I made lovely easy beetroot burgers with the microwave. You grate the beetroot with garlic and onions and olive oil, to moisten, (easy to fry it all in the M/w) mix with breadcrumbs and a bit of flour. Shape them and fry on the hob. ( or bake)

B. Prune,lemon,pumpkin seeds apple juice smoothie.
L. Steamed roots and cauliflour with tamari, olive oil. Some dark choc.
S. My ginger cake with hazelnut milk.

Hello 👋 found this thread whilst looking for some inspiration, hope it's OK to join. 1st Jan was my first "veganniversary" and this year I'm hoping to be a healthier vegan, the kind I aspire to be, the kind that eats lentils and chickpeas (an ad for vegan Burger King options literally just came on as i was typing that 😆). I'm actively trying to lose weight and am just over 4kg down since 1st Jan.

My life is busy, like most people these days. I rely on meal planning a week at a time based on when and where I'm working and am making a conscious effort to not rely on meat substitutes for ease quite so much.

My grocery delivery next week is from Tesco (I'm usually a sainsburys shopper), any must haves that I should put in my basket?

I like your username littleblue You're very welcome, it's great you've lost weight so quickly. Of course it's just as easy to put it on with veganism!

Which I did when I first began until I was introduced to the Paul Mackenna Way of Eating. I found it brilliant because it's not so much WHAT you eat (though of course it has to be healthy). But HOW where and when. If I overeat ,no matter what it is I put on weight, you just have to get to know your body and eat when you're hungry and stop when you're full.😀

B. A pomelo and fig
L. My own root veg curry with tahini dip. Some dark choc buttons.
S. Couple of slices spelt baguette with pnut butter, olive oil and yeast spread, with endive and shallot salad

I think I spend half my life looking for the little blue Brio train, I've never known a kid lose something without even moving 🙄

I'm a calorie counter for weight loss and have a lot to lose, hence the rate so far. I'm a big yo-yoer and have previously lost a huge amount (about 75kg). Interestingly that initially started with veganuary about 10 years ago. Unfortunately it's pretty much all gone back on! Meal planning and batch cooking are vital for me (60+ hour working weeks and a high needs autistic child) but like you say, eating mindfully really helps. I try to eat 7am-7pm although thats tough when some nights til midnight sitting at the dining table! I try to take 15 minutes to eat each meal and actually sit and eat it rather than eating on the go. Not always successful but it helps!

Today has been v carb heavy but only about 60 calories over my (admittedly generous!) goal

B: porridge and a dollop.of strawberry jam (like eating rice pudding for breakfast!)
L: jacket potato, cheese and picked red onions
D: spaghetti bolognese

Little. Dh can loose stuff without moving too! He's old enough to know better! (he works from home). he has the same organisational skills that he had as a teenager I should've realised he would n't change!

Interesting about calorie counting, I could never get on with it that's why the success I had ,and still do, with Paul Mc. (the best part is that you can go on and off it, there's no 'Oh I bxggered it I'll go mad) thing is so great for me. I use Food Combining too which is more for my health. That is fab too.

I know I sound like a food obsessive but I'm running around , size 10ish at 72 with no health probs so I must be doing something right!

B. Apple juice and fresh, fig, linseed and lemon smoothie
L. 3 slices spelt toast with my fave spreads and a salad. dark choc buttons.
S. Ryvita with tahini, white bean dip. shallots.

Yesterday for me was:
B Toast and peanut butter
L Falafel and hummus wrap with salad
D Pasta bake with lots of kale and green beans. Cheese sauce was nice using oat milk.
S Crisps and wine (v. healthy...)

Ugh I was so motivated for weight loss at the start of the month but all gone to pot a little - still managing dry January fairly easily though

yesterday was lentil soup for lunch and spankorizo with smoked Greek tofu for dinner (from Nisitima) and then snacked on hummus and bread and nuts

today lentil soup for lunch again and making pulling a BOSH Wellington out of the freezer for dinner, will have it with roast broccoli and cauliflower. Had a massive amount of shortbread earlier as I was trying out a recipe ahead of burns - needed more butter and sugar (though it’s all gone!

I've found weight loss is a lot to do with what works for you. I've done low fat, low carb and slimming world in the past and lost weight. But the most effective and sustainable way for me to control my weight is IF (intermittent fasting). I always re-start when I want to lose a few pounds and within a couple of weeks feel better for it (and I get other benefits, like feeling less bloated and generally better in my stomach as well as less hangry 😂)
I had a good run before Christmas, but find January a difficult time to start again, especially when it's cold! I am not doing any dry January either ;)

Yesterday
B: overnight oats with blueberries and seeds
L: avocado toast, dates
D: veg crumble with broccoli and gravy

Today
B: overnight oats with raspberries and toasted flaked almonds
L: peanut stew and rice
D: big salad, lasagne and peas

Yes Domestic. I like the IF way of eating too (esp to kick start a return to normality. like after Xmas ) I can't eat late at all now, it stops me sleeping.

I hardly drink alcohol at all (we had a good red wine through my birthday meal ) but it still bloated me. Well the meal itself probably contributed to that!

B. Finished fig smoothie with pecan nuts and a pear.
L. Baked butternut squash, brussel sprouts with onions and garlic tamari gravy. some dark choc buttons.
S.Oat crackers with my white bean dip and salad
Sn. My ginger cake and nutmilk. (warmed)

I haven't tried her recipe for shortbread @Citygirlrurallife but I really rate domesticgothess.com. Anything of hers I've tried so far has been great. I've just added the shortbread fingers to my list of recipes to try

B. O/n soaked prune, apple/pear, a pomelo\fig juice with water and ground pumpkin seeds.
L. Steamed leeks with spelt toast and my spreads (leftover salad). A few pieces of Earl Grey vegan but didn't say, (all the choc I buy here is, they do vegan in our shop but it's soooo sweet) leftover from Xmas (twas nice from our local coffee shop).
S. Quinoa, steamed romescu cauli. Mustard sauce.

Has anyone got a good way to cook kale? We bought a lot of it and I didn't much like it last time I cooked it. It was too chewy.

@ppeatfruit i always make kale salad these days, only way I like it. The key is to make a lemon juice and olive oil dressing and then spend a good 10-15mins massaging the kale to break it down and leaving for a good hour, I don’t know what the crazy science is behind it but it makes it more edible in terms of texture and taste

i had friends over for an early Burns last night and made:
Mushroom and walnut pate with home made oatcakes
V Haggis (McSweens) with neeps’n’tattie towers and mustard whisky sauce
Cranachan cheesecake

damn it was all so good! They stayed over so I then did a full Scottish breakfast of portebello mushrooms, home made tattie scones, v black pudding, Richmond sausages, roasted tomatoes and baked beans

beyond stuffed

City I couldn't be bothered tbh (blush) to rub the kale with lemon juice etc. thank you so much anyway! So I removed the whole of the stalks of the curly kale cut it up very small and steamed it hard (I should've done that before). it cooked fast , (though it was very fresh) and then I added half of it to fried garlic and shalllots. With herbal salt it was delicious!

L. Quinoa\ kale (see above) and leeks with tamari and Chox.
Sn. vegan Choc sorbet . We have discovered the best patisserie in this area and they accidentally create some very tempting vegan deserts/sweets.
S. Toast with my spreads.

@Citygirlrurallife I agree your burns night sounds amazing! I did try the domestic gothess recipe for shortbread fingers, but unfortunately they were over baked so not the right texture. I'll do them again at a lower temp and report back 😬

Yesterday
B: 2 slices of toast with PB and kimchi
L: 2 crumpets with plant butter and marmite
Dinner was a nod to the lunar new year. LM (fuck) pancakes, vegan prawn crackers, crispy tofu with rice, stir fried greens and black bean sauce (also made sweet and sour which DH and DD1 had last night, leftovers will be my work lunch on Tuesday)
S: handful of salted peanuts, beetroot, tinned pineapple, dates
