Hello folks! It’s KobaniDaughters with a name change - it has been TOO long. Welcome to newbies especially being new to veganism

i also rarely make separate meals but in fairness it took some time to retrain myself to cook while I was transitioning to plant based. My DH and DD love meat (and DD doesn’t eat much plant protein) so they have it when out and about, DS became a pescatarian this year but I think is on his way to vegetarianism at some point.

Yesterday for me was:
tahini, lemon and chilli dressed salad
leftover lentil hotpot
apple
some slices of the applewood vegan cheese

SapatSea · 07/11/2022 14:22

Hope you are enjoying rural life Citygirl

After getting thoroughly drenched out walking on Sunday. I had a shower and quickly prepped a fake nut roast - paxo, walnuts, mushrooms. We had it with mashed swede, cavolo nero, carrots, peas and a bit of gravy from the freezer - it was so comforting!

Tonight I'm making a green lentil dal with a a vegetable subji side to use up any veg lurking in the fridge before my shopping comes tomorrow morning.

I'm definitely into Autumn/winter mode now with the cooking.

PartTimeDomesticGoddess · 07/11/2022 21:54

Big wave to @SapatSea and @Citygirlrurallife 😊

Yesterday
B: porridge with frozen blueberries, seeds and maple syrup
L: moving mountain fish finger sandwich, cucumber
D: black bean enchiladas with avocado

Am now doing an 8 day reset, which started today with 3 small protein shakes and then broccoli/cabbage/tofu miso soup for dinner

@SapatSea I saved that Meera sodha dal too, looking forward to trying it

DarkNecessities · 07/11/2022 22:18

B: banana and pecans
L: Levantine table sweet potato falafels with salad and corn chips
D: Oven roasted veg with chipotle

Citygirlrurallife · 08/11/2022 17:50

Hello @PartTimeDomesticGoddess ugh I need a major weight loss reset too! No motivation (as ever)

had a vegan sausage roll and oat milk flat white out with DH this am then some hummus and rice cakes for a snack

currently making carrot miso pasta from an oddbox recipe for dinner

DarkNecessities · 08/11/2022 21:17

It’s harder in the winter months CityGirl
I get so hungry!

B - Banana
L - Bol Pot
D - Pea and Spinach risotto with a green salad, fennel, avocado, pumpkin seeds etc

DarkNecessities · 08/11/2022 21:21

@PartTimeDomesticGoddess

Let us know how the reset goes.
I use Huel if I’m feeling like a need to gain back control

PartTimeDomesticGoddess · 08/11/2022 21:38

Day two done, going well but I've been mentally gearing up to it for a month or so. Am pretty much winging it, using the protein shakes as an easy/lazy way to keep level at work (apparently hangry is not an acceptable outlook 😂)

As well as protein shakes today, dinner was a curry made with silken tofu, cherry tomatoes, spinach and broccoli

ppeatfruit · 26/11/2022 09:52

Hello, I'm back after a very eventful time, but everything went well. Big waves to everyone !!!!!!! soo nice that some older posters are back, I don't mean OLD of course I just mean ,Oh you know what I mean !!

Talking about weight and health (which I live really) Vegan food can be just as fattening as non. (you can also have a slimming non vegan diet It depends on what you choose of course but I stay away from supermarket ready made stuff. It has so many additives.

B. I made a lovely smoothie with macadamias, 2 pears, sultanas and lemon skin plus pith which has a better supply of vit. c than the juice apparently. We're running out of lemons!
L. Mushroom soup with ryvitas. And G reen and.B,s 70% dark choc.
Sn. Rye bread with lo salt yeast spread with pnut butter, slices of onions.
S. I made a rice pudding with almond milk, molasses and spices.

dingdongdingdongsding · 26/11/2022 16:25

am loving my slow cooker at the moment!

Pseudonymminymie · 26/11/2022 20:04

These look good, but are you sure you're getting enough protein? Today for me was B Scrambled tofu on toast, L but burger sandwich and D will involve lentils, couscous, lots of veggies and maybe a vegan sausage thrown in. I'm very committed to veganism but think we do need to be careful.

Pseudonymminymie · 26/11/2022 20:04

Ah, but burger meant nut burger!

ppeatfruit · 28/11/2022 10:01

Psued If we think about it, there's so much protein in soya (more than in steak) that there's very little chance if you're eating it of going without enough) Plus all fresh greens have a good amount. The herbivore animals grow well on grass don't they?. Oh and the gorillas😀

OP posts:
ppeatfruit · 28/11/2022 10:12

Also pnut butter (the type without sugar or palm oil etc.) is full of protein, and suits me (not everyone of course). B12 is to be found in the yeast spreads, which apparently is the only vitamin that meat has that veg doesn't. I don't eat Marmite because I watch my wheat intake but there are other types, I eat Natex reduced salt Yeast Extract, plus the yeast flakes for stocks.

Frantic wave to @ppeatfruit. Lovely to see you back

Today has been/will be

B: Monday smoothie (dates/coffee/soya milk/pb/frozen banana)
L: paella from the freezer, beetroot
D: chickpea crumble, broccoli and gravy
S: choc orange rice cake x2

Citygirlrurallife · 28/11/2022 19:14

Glad to have everyone here even if we’re all a bit rubbish posting - shall we change the name to “vegan every so often” 😆

today was:
scrambled tofu
cucumber with lemon and tahini sauce
braised cabbage with peppers and mushroom pilaf (from ottelenghi test kitchen and it was AMAZING)

got book club coming later so wine and hummus as well

Pseudonymminymie · 28/11/2022 19:32

Hello ppeatfruit! Thanks for your reply! I just think we all need to be aware of potential problems (which are of course not insurmountable). I take a vegan vitamin and mineral supplement and additional choline just to be sure. I know that's not for everyone though. A bout of shingles a few weeks after I became vegan scared me a bit (although of course could have been completely coincidental).
Today for me B seedy wholemeal slice of toast with peanut butter, L sandwich with wholemeal seedy bread with a kind of homemade lentil pate ( actually mush but very nice) Sn stewing veg ( sounds weird but fruit not good for IBS) and D the cous cous veg thing I was going to have on Saturday with vegan sausage.

PartTimeDomesticGoddess · 28/11/2022 20:36

All present and correct then @Citygirlrurallife 👋
Excellent suggestion for the next thread title, but at this rate we won't need it until 2024 😂

DarkNecessities · 29/11/2022 11:12

B: Sour dough toast and marmite
L: Hummus with various things dipped in it
followed by some cashews and dates
D: Smashed Blue roasted potatoes, Kale and Celeriac steak with walnut pesto.i

Citygirlrurallife · 29/11/2022 23:04

lunch courtesy of pret - tomato soup and the açai almond butter pot thunf

dinner was burger and chips. Went to a pub with loads of vegan options on the menu but apparently all that was actually available was the burger - their cassoulet sounded lush as well 😔

PartTimeDomesticGoddess · 29/11/2022 23:10

How disappointing @Citygirlrurallife ☹️
Your dinner sounds lovely @DarkNecessities

IF day today

L: protein shake
D: lentil and root veg stew with gravy

ppeatfruit · 30/11/2022 09:11

Psuedo. I don't know if you know about The Blood Type by Dr. Peter D'Adamo Way of Eating which (in my experience) cures a great many health problems it's worth looking at e.g. wholemeal (wheat) bread is often not good for people (it can irritate), they get on better with pure spelt or rye bread.
