These look good, but are you sure you're getting enough protein? Today for me was B Scrambled tofu on toast, L but burger sandwich and D will involve lentils, couscous, lots of veggies and maybe a vegan sausage thrown in. I'm very committed to veganism but think we do need to be careful.

I was completely vegan for 7 years and have recently had to have a bit of a rethink - it wasn't protein that was a problem, it was calcium & vit D. I was really quite unwell. Returning to the vegan fold (and this thread) after a few months off, and this time I will be much more careful with supplements.

Today will be
Toast and marmalade
Don't know about lunch - I'm batch cooking this afternoon so I'll probably grab a banana while I cook
No-Catch "tuna" arrabbiata pasta bake

Citygirlrurallife · 04/12/2022 11:02

I’ve started taking Vit D, after 10years in perpetual sunshine I reckon my levels are now taking a hit in british winter

TwoMonthsOff · 04/12/2022 17:11

I had some Heck vegan chipolatas for breakfast today - very nice and £2 for ten on offer in Asda atm.
im going to make my next bean and sausage casserole with them as they’re ‘firm’

ppeatfruit · 12/12/2022 08:58

Just a quick post to ask how everyone's coping with the problems (heating etc). We're deffo in the right place, the Fr. Govt have a better attitude to people's difficulties. Oh btw Domestic I discovered Chocoloney when I was there, YUM YUM ! A bit too almondy though, you certainly feel like you've eaten some chocolate when You've had it!!!!

B. Lemon soaked figs and apples with apple juice up to room temp (I can't bear really cold stuff when it'a cold out!)
L. baked celeriac, butter nut squash, with a mushroom bake, I made it after thinking I'd make mushroom burgers and then did a short cut ! (we've discovered that the council have restarted a mushroom farm along the road from us so we bought a lot in the village market last week). We live on a hill that's basically honey combed with caves. Chocolate buttons for dessert.

Supper, I made a Christmas crumble (using the oven a lot)! It was nice with quince, apple mixed with my own mincemeat and topped with apple\walnut topping. It was good esp. because I put little lumps of marzipan in the apple mix.

Sorry I said a quick post didn't I. xx

Oh I forgot I usually put linseeds (ground or soaked) In my smoothies talking about vitamins , those are very good for vits and minerals. as is fresh lemon (it contains more Vit C in the peel and pith though so I chop it ALL up and soak o|n.)

Hello lovelies, I'm back (I haven't been away geographically but my laptop has been used by DH whose own laptop has broken) he needs it for his work. It's amazing how much work can be done in the house when I'm not on here!!!!!

Anyhow I hope everyone had a good Christmas, it's always interesting to see what vegans eat for Xmas dinner!! it was just us because the kids couldn't come due to illness and the weather, strikes etc... Things don't seem to be as easy as they were, do they? We couldn't get Brussel sprouts here for some reason

Xmas lunch for me was;

Smoked tofu slices with cranberry sauce.
HM Chestnut stuffing then my one non vegan sin is one piece of organic turkey (blushes) but I made veg. onion gravy and separate root veg. with mashed cauliflower .
HM Xmas pudding and mince pies which were an experiment made with yeast and almond butter. plus HM mincemeat that had been soaking for too long in Marsala to remember. I also made almond milk custard for it.

I hope you're all okay btw.

Hello @ppeatfruit! Merry Christmas and a Happy New Year 🥳
Good vegan Christmas here - Christmas roast was a Tesco wicked fake turkey thing, vegan pigs in blankets, nut roast, braised red cabbage, roast parsnips/potatoes/carrots and sprouts. With cranberry sauce and gravy, of course. And homemade tiramisu for dessert (domestic gothess recipe)

Plenty of lovely food and treats otherwise (some of which will keep me going through January and possibly even February lol). Homemade highlight was Meera Sodha's Christmas baklava which was in the guardian weekend before Christmas. Absolutely delicious (and easy) and will definitely be repeated

ppeatfruit · 31/12/2022 10:17

B. O\N soaked fresh ginger\figs\whole lemon, pears and fig juice\filtered water.
L. H/M Whole rice with mushroom\onion\garlic, grated carrot/cucumber/shallot salad. 70% dark choc. Then choc tofu dessert
S.2 slices of spelt toast with yeast spread and pnut butter spread and a shallot.

ppeatfruit · 31/12/2022 10:27

That baklava sounds good, recipe please Domestic. Good to hear from you . I'm trying to be green by not linking !!

Happy new year everyone!

I find it hard keep up with the daily thread, but would anyone be interested in a "what's on the meal plan this week" thread? I tend to plan meals weekly.

TheodoreMortlock · 03/01/2023 23:45

Massaman recipe is here monkeyandmekitchenadventures.com/thai-vegetable-massaman-curry/

The peanut sauce is this one www.forksoverknives.com/recipes/vegan-sauces-condiments/almost-instant-peanut-sauce/ and you add it to noodles
or spaghetti with chopped spring onion or whatever else you want in there.

Ostryga · 04/01/2023 09:13

Good morning! Back to school today, Dd was most unimpressed after a lovely Xmas break.

Yesterday was a lazy food day due to getting everything sorted for the return to normality.

B - toast & Naturli, banana and a Califia iced coffee
L - tomato & lentil soup
D - Kirsty’s cottage pie & veg which was not great and I wouldn’t have again. I really need to find some good vegan ready meals (or actually meal prep 😂) for when I’m busy/lazy.

Citygirlrurallife · 04/01/2023 20:05

Today:
B: bread and butter (more exciting than it sounds - the bread was goddamn amazing)
L: vegan nourish bowl at pizza express
D: wicked Wellington with roast potatoes and steamed courgettes

PartTimeDomesticGoddess · 04/01/2023 23:18

Waves to @Citygirlrurallife 👋

DH and I are off until next week, so enjoying not being back to routine just yet...

Yesterday was

B: porridge with blueberries, maple syrup and toasted flakes almonds
L: root veg mulligatawny soup, crackers and nut cheese/oatly cream cheese
D: plant burger in a bun with all the trimmings, sweet potato fries, beetroot, avocado and red cabbage coleslaw
S: twiglets, few chocolates

Today

B: sourdough toast, one slice with avocado the other with marmalade
D: pasta bolognese (topped with grated cathedral city), broccoli and garlic bread
S: Christmas cake, handful of salted peanuts, small chocolate bar

Citygirlrurallife · 06/01/2023 07:25
