Liking the sound of root veg mulligatawny soups! PartTime. Your meals yesterday do not sound boring at all Citygirl*

Today I'm making Scotch broth. I meant to make it for lunch but the packet of Great Scot broth mix I bought has split yellow, green and blue peas, and dried veg in it as well as the traditional barley and red lentils and has to be soaked for 8-12 hours, so it looks like it might be dinner. It has swede and cavolo nero in it and some soy to pep it up a bit. Comforting if a bit bland. Based on this:

L Hummus, tomato and caper sandwich
S Little bit of bean soup with added greens
D Jacket potato, vegan sausages and cauliflower and broccoli cheese.
Many cups of tea with oat milk, and wine!

Evening! Hope everyone’s first week back post Xmas/NY has been alright.

B - This Isn’t Bacon sandwich - not bad actually, would have again.

L - chickpea ‘tuna’ salad, charcoal crackers and a homemade mango chutney left over from Xmas.

D - mezze - smoked aubergine purée made into baba ganoush, stuffed grape leaves, lentil soup, falafel & manti (tiny Turkish dumplings usually made with lamb but these were soy mince) with sumac and aleppo pepper Naturli butter and garlic & dill Alpro no sugar yogurt, far too many flatbreads. Delicious!

Fri: fridge-ends fried rice

@TheodoreMortlock like your meal plan. What do you use in the Massaman curry instead of the usual beef?

The Guardian's Ottolenghi column has some nice sounding vegan soups this week, I particularly like the look of the last two.

Yesterday was
B: slice of sourdough* toast with marmalade, dates
Not so much lunch, as a series of snacks/small things while busy - trek bar, 3 small crackers with oatly cream cheese and chilli jam, alpro cherry yogurt, slice of Christmas cake
D: black bean enchiladas, beetroot and avocado. Monty bojangles truffles (more than 1 lol)

The sourdough was an eye-wateringly expensive loaf I bought from a small market in December, that I sliced and froze. It was worth it, it's been sooooo good 😋

I tried to make Scotch broth last night .The Scotch broth lentil, barley and pea mix was a disaster. I soaked it for 10 hours ( instructions said 8-12 hours) and stirred it now and again when I was in the kitchen but it wasn't enough. The barley overcooked and the peas were crunchy even after cooking for an hour and a half. It was cooked in tons of water in a huge pan but still bubbled over with lots of gloop so needed soaking up with paper towels - yuk! Should have stuck to seperate barley and red lentils or used the fancy Tefal multi cooker ( pressure cooker) DH bought last year and has used once.

Luckily, I cooked it seperately to the rest of the soup ingredients (swede, leek, carrots, Cavolo, stock etc) so added a can of cannelini beans to that mix and used the parsely and some lemon and garlic and oil to make a gremolata. It was really nice. Much nicer than my thrifty soup would have been.

Tonight is Black eyed bean curry made with fresh tomatoes and sides of cauliflower tossed in cumin seeds and smoky harissa paste and roasted and some garlic saag, flatbreads, coconut yoghurt etc.

@SapatSea in the first sentence of your post I thought maybe you should try an instapot - I buy all my bean dry and do them in that these days, so much cheaper and you can cook them with garlic/bay leaves/thyme etc

London day seeing The Cursed child so lunch was a marmite sandwich and tangerine in the car, and dinner was a pretty bloody good pizza at Pomodoro Rosso (got the Verdura with vegan cheese substitute) and a handful of DD’s skittles in the theatre

and bloody delicious coffee from Monmouth

@PartTimeDomesticGoddess it was a recipe I got from these threads I think and I've customised a bit!

Finely slice an onion, finely chop a few cloves of garlic, and slice three leeks, put them in a shallow casserole dish with 1/4 cup of broth. Put in oven at 180 for 10 - 15 minutes or until they're al dente.
Take them out and mix in a decent amount of Puy or Beluga lentils (I use a pouch of Merchant Gourmet puy lentils if I don't have time to pre-cook) and some vegan creme fraiche.
[Creme fraiche - 1 pack silken tofu, 5 tablespoons nooch, 4 tablespoons lime or lemon juice, 1/2 cup neutral plant milk, blend in high speed blender - you need about half of this for the recipe, save the rest as it will live in the fridge for a week]
Dot about 2 - 3 tablespoons of capers over the top.
Cover with foil and bake for another 20 minutes.

Friends for dinner - sag aloo shepherds pie and broccoli. Apple and pear crumble with custard
Bendicks mints, caramelised nuts

The shepherds pie was an Anna Jones recipe, not very shepherds pie like but tasty. The veggie guests added grated cheese, which worked well and I'd cook again

@Citygirlrurallife . Your pizza sounds lush. I bet you deserved it after the endurance test of staying comfortably seated during "The Cursed Child."

I bet your beans taste great cooking from dried. My Dh bought the Tefal Turbo Cuisine multi pressure cooker last year ( and a slow cooker the year before) but has only used it once. Takes up a lot of room and isn't earning its keep. I must make an effort to read the manual and figure out how to use it. I still have nightmares about my mother making me put the weight on her stove top pressure cooker just as the steam was about to blow out of the hole when I was a child in the 1970's. I've avoided them ever since.

@PartTimeDomesticGoddess your dinner sounds like a big warm hug of a meal. Ultimate comfort food! Pear and apple crumble is my all time favourite "nursery pud." It also takes me back to the 1970's - but in a good way. Sadly, no one else in the family likes crumble Sad and I don't like supermarket ones. Might have to make a mini one just for me soon. Bendicks mints - nice too!

D: veg gyoza and wok greens
S: small slice of Christmas cake, half an orange and a couple of tinned pear halves left over from the crumble that needed to be eaten

Today
B: smoothie (dates/coffee/PB/soya milk/frozen banana)
L: kimchi, beetroot, freezer paella
D: sausage and bean stew, broccoli, crusty bread and plant butter

@SapatSea - commiserations. DD19 has moved out, so I'm now the only one who likes crumble too 🙄. Luckily I have friends who love it too, but I also keep meaning to freeze some crumble mix in small portions so I can make one just for me if I want one. Alpro vanilla pots are a good single serve for custard too 😋 I've never done an apple and pear one before but it was delicious, based on a Sophie Dahl recipe I saw recommended on here

L: 3 Richmond sausages, baked tomatoes and portebello mushrooms, half an avocado
S: hummus and cucumber
D: golden beetroot borscht - used far too much beetroot so it was really sweet. DS and I forced it down but I’m afraid the rest went in the bin. I hate to waste food but it was just crap. Had it with half a buttered bagel, followed by two mighty bojangles truffles

@Citygirlrurallife my favourite is Eaten Alive, but that's not the one I'm on at the moment (can't remember what it is but it's available locally and I'd buy it again). Ocado have a few vegan ones, couple of which I haven't tried yet so I'll try them when I've eaten what I've got. I was thinking of making some too but my BIL muttered about botulism which put me off a bit to be honest!

@Citygirlrurallife if you’ve got an Asian supermarket near you then Jongga brand is The One. It’s better than any other I’ve tried and I’ve tried them all! You can also get it online at Starry Mart.

@Ostryga i don’t. I lived in LA for 10years with SO many different cuisines and markets at my disposal and now I live in the middle of nowhere with not much more than a pizza express 😫 but also trying to work out which U.K. brands for certain things are good subs for the US ones I used to get. Can you get WildBrine in the U.K.?

Hello again, we finally got my password right so I'm logged in properly! Who's going to start a new thread? I'm off in feb again so maybe not me.

B. pear,lemon,fig, apple juice, water and linseed smoothie with ground ginger (I'm hooked on ginger atm) !
L. I slice pumpernickel rye bread and one spelt slice (softened and warmed in the m/w with my usual spreads and a spinach/carrot/endive/shallot salad with olive oil mustard and walnut oil dressing.
Sn; hm ginger cake with rice flour, semolina ,sweetened with carob and using hazelnut and rice milk.

Bowl of cauliflour bake and steamed greens.

How are you finding the country life ? rural I love golden and red beets you can chop them up and steam them of course and then make a stew or bake them . I've been clearing out the freezer and used some white bean/tahini dip as a sauce for spaghetti, it was lovely. Of course you have to add fried garlic and onions to it.

My favourite beetroot recipe is grated beetroot with balsamic, parsley and Greek white. It’s a lovely main for lunch or a great side dish for dinner.
