@KobaniDaughters how do you chickpeas the instapot, I've never tried them in mine I usually just bung a handful of various grains and hope for the best, mine is actually used most for its yoghurt function.

I have an old cookbook with cannelini bean (w Tabasco, garlic, lemon) and broad bean (W cumin, garlic,mint) hummus recipes that are fab, much prefer either to any chickpea concoction

Today:
B. Muesli, strawberries, walnuts, alpro Greek yoghurt
L. Leftover chickpea potato frittata, sautéed onion, yellow pepper, courgette, tomatoes
Sn. Apple, pear, Pom bear
D. Homemade takeaway style curry with Linda shreds & mushrooms, rice, mini magnum (Morrisons)

@KitchenFishCurry I put about double the water to chickpeas, a bay leaf or two and sometimes some garlic cloves then manual on high for 35-40 mins, I do a huge batch so I can then freeze them for convenience

@theneverendinglaundry I find the random, cheaper, lesser known, usually Middle Eastern so in a different aisle, brands are so much nicer than supermarket own as well

L: spicy bean wrap and a smoothie
D: oven roasted veg (sweet potato, peppers, red onion, mushrooms, beetroot and corn cobettes) with baked Tofoo and hummus, tahini and date molasses dressing

And this one is something Ive done a variation of a few times. Last time, I just topped the seasoned whole roasted aubergine and topped with plain soya yogurt and a spoonful of harissa paste

Yesterday meals were good
B yoghurt with seeds and berries
L roast veg salad with pearl barley and hummus
D homemade pizza with a sort of cauliflower cheese
but in-between I ate anything I could get my hands on , nuts chocolate bread etc etc

Yesterday was an odd one for me as I had a late lunch again thanks to editing and physiotherapy and then just snacked when I got home come cos the physio made me work really hard and I was starving but hadn’t really thought out a proper dinner!

L: orders a selection of vegan tacos and ceviche in
“D”: orange, cashew yoghurt and blueberries, Brazil nuts, DC’s leftover green beans, some leftover naan, spicy pea snacks

Joining in the hope of tasty tofu recipes. I love tofu but dc don't and we all have a bit of a cheese addiction Blush I've been vegetarian for 31 years now and was vegan for 2 as a teen. I'd love to incorporate more vegan meals into our diet.

You have a good memory PartTime Grin Yes I'm off tomorrow and just praying that the crossing isn't going to be too bumpy !
I'm equipped with ginger supplements and mint ess. oil to sniff which worked well last time.

I cooked the chickpeas in the instant and everyone complained of the smell, tasted ok though. I tried making some mayonnaise but it wasn't a success . Its the second time I've used the recipe last time it was too thick and this time far too runny and has split not sure what the difference was

Why is vegan mayo so expensive it has less ingredients in it 🤷‍♀️

Did the homemade stuff taste good? Was it just the consistency that wasn't right

It tastes great because I add loads of garlic and nutritional yeast just can't get the consistency right . Its a recipe from veganomicon plant milk mixed with flaxseed then add the oil, I maybe should have left the milk and flaxseed to develop for longer to take on a more eggy texture. When you make traditional mayonnaise from egg you can alter the thickness by changing how much oil you add but I can't remember if you add more or less I suppose it would be the same for the vegan version

D: was at a party and the only vegan food was some raw veg so I came home and drunkenly snacked on a random assortment of carb based crap

We hit up a food truck festival so shared the following for lunch and had leftovers for dinner: crispy oyster mushroom bao buns, jackfruit California roll, Cuban “meat” and potato balls

Also smacked on raspberries, an orange, dark chocolate and there’s a tub of cashew milk salted caramel ice cream in the freezer with my name on it….
