I do think that using another chef's recipe in his dish isn't ideal, though. Kasae and Tommy have completely invented their dishes; he's using someone else's work for part of his, however wonderful a job he has done.

I've got some fennel in the fridge. I shall not be doing this with it. (Even though that pudding looks right up my street.)
