New day with sunshine!

Have a great day.....am going to eat less but stuff myself with melon!

500g lean diced lamb
1 large onion, roughly chopped
2 large carrots, quartered lengthways and cut into chunks
2 garlic cloves, finely chopped
2 tbsp ras-el-hanout spice mix
400g can chopped tomatoes
400g can chickpeas, rinsed and drained
200g dried apricots
600ml chicken stock
1/2 butternut squash in chunks

Cook low and slow in the oven (mine was in for 2 hours at 150 degrees)

Serve with couscous, scatter over some pomegranate seeds and some fresh coriander.

Syn the apricots - everything else is free.

I luffs tagine. Might shove that on the menu this week. My recipe is more or less the same as yours fanny but I shove it in the slow cooker. And I serve it with savoury rice as I am not a couscous fan.

And houmous and toasted pita bread. Yum.

Just looking through old sw mags and cookbooks for some inspiration for this week. Think I might do szecheun beef one day and debating whether to do a thai green curry another.

I am more a get up and see what is in the freezer/cupboard type of girl normally but am quite busy this week so want to be organised. Plus we are having tapas Saturday for dds birthday and I intend on being pretty norty so as few syns as possible this week will be helpful.

Thank you Franny Smile I love recipes that don't contain quark or yoghurt. Is the spice mix easy to get? I can't wait to try it.

playinghouse, I get mine in Sainsburys, either in the spice section (it comes in a little tub, rather than a jar) or in the speciality section.

Its very flavoursome and very filling.

No it doesn't playinghouse just light coconut milk, thai green curry paste and veg.

Frylight
2 level tbsp of thai green curry paste
8 skinless boneless chicken thighs
600ml boiling chicken stock
100 ml light coconut milk
400g frozen veg
2 tbsp light soy sauce
salt and pepper
fresh coriander to garnish

Fry your chicken off with the paste. Add stock and milk and boil and them simmer for 10 mins. Add the veg and cook for another 6-8 min until veg cooked. Serve with rice.

1 1/2 syns per serving and serves 4.

Personally I would be tempted to use more paste and swap some of the stock for more coconut milk and syn it. I also like a thicker curry sauce so would possibly also add a little cornflour to it before I add the liquid. And I would want fresh veg and loads of fresh chilli.

But that's why I am fat pmsl. If I had a light syn day though and had eaten plenty of superfree I would be tempted to make it a lot nicer for a couple of extra syns. Will let you know if I do and how it turns out.

Got a few things I want to make this week.....

Using El Paso stand and stuff tortillas, I am going to make a beef and onion pie. ???? with sliced potatoes on top and served with mushy peas. Smile

Doing Turkey mince meatballs with spaghetti tomorrow.
Maybe cauliflower garlic bread with it too.

Im lacking in inspiration this week. Have lunches sorted, but need something good for the family this week, as they are whinging about the lack of chips etc!!

ANyone got anything good planned?

I made a lovely thing last week with lamb leg steaks (with all the fat trimmed off!)
Fry light spray, lamb, shallot, onions, courgette, carrot (the latter 2 I made into long strips like spaghetti)
Cook it up then some tinned tomatoes, smoked paprika and a dessert spoon of low fat creme fraiche stirred in at the end. I served with spaghetti (so my sons were less suspicious of the courgette and carrot) but brown rice equally nice.

Thumbs up all round which is really saying something in our house! Free apart from Syns in creme fraiche, and yummy!

Afternoon everyone

B plum rejected by ds

L chicken from last night and salad. Little splash of dressing. Low fat but not free sadly but its yum so worth the syn

T salmon and stirfried veg.


This week we are having stir fried beef, thai green curry, salmon tonight and depending on the weather I might do beef stew Thursday. Or shepherds pie. Or even top it with sliced potatoes.

I had a sneaky early weigh this morning and so far I have lost 6lbs in 12 days. Can cope with that. Especially as I have had wine every most nights.

Evening all Grin been a relatively good today after the horror that was the weekendWink (32 syns were consumed over the weekend)

Breakfast - big bowl of chopped banana, strawberries, raspberries and blueberries and a glass of milk (HEXA)

Dinner - slimming world beef burger (gorgeous) with slimming world chips, salad, wholemeal roll (HEXB) and ketchup (1 syn). Bounty treat cake bar for dessert (4 syns). butter on roll was 2 syns.

Tea - am going to have a slimming world chicken burger with a load of salad in a bit.

7 syns so that works out at 39 syns over 3 syns, 6 syns under the max limit Grin. Also walked the dog (well dragged along really as it was raining, she had to wear a coat and the coat offends her) and been to boxercise this evening for an hour

Tonight I made

Turkey meatballs and spaghetti
Turkey and vegetable pie
Cauliflower bread
Red velvet cupcakes BlushBlush


Everything was sw friendly apart from the cupcakes , dammit!!


The pies were awesome....topped with sliced potatoes.
Cauliflower bread was a triumph!

Just googled a recipe and sw-ed it.

Hi can I join the thread please?
I've just had my first weigh in last night and lost 4lb. I have another 1st 12lb to lose! I'm breastfeeding my 4 week old so am hungry all the time so need lots of snack ideas, otherwise I eat whatever I see!

For the second week running it all went pearshaped on Sunday & Monday, which is unfortunate as it's weigh-in today.....ho hum we'll see what damage has been done.

I really need to workout how to keep focused when I'm home over the weekend.

Hi girlsonfilm , whenever I'm in a 'fuck it' mood and close to binging on crap I write a list of why I want to lose weight, 10 reasons usually and then weigh the feeling of achieving my goals against the taste of the choc etc, it works for me. Of course, we all slip up now and then and nothing to be ashamed of.

Maybe keep yourself busy with exercise? after a jog/gym session my craving for crap etc is usually gone

Lost 3.5 pounds this week which is brilliant.Only lost 1/2 pound over the previous 2 weeks due to feeling really premenstrual.I am 51 and I guess my hormone levels are altering.This is causing irregular weight loss some weeks unfortunately.I just have to keep on persevering with the plan Confused.

Back home...funeral was a bloody lovely send off, it was nice meeting up with some old friends (including someone who I had a crush on 25 years ago and now I do again, dammit, oh well ), everyone said that the guy whose funeral it was would've been really annoyed he wasn't there.

Anyhoo. I forgot my coolbag of food Blush (and my bloody phone charger, had to buy a car charger on Monday morning) and only just remembered my funeral outfit...thank goodness I'd stopped to check the tyres before I hit the motorway! So, I had a chicken salad for dinner on the road, without dressing (get me!)

Monday:

Hotel brekkie - 1 hash brown, 1 sausage, lots of mushrooms, scrambled egg, tomatoes, wholemeal toast (1 - HEB) and one of those annoyingly tiny packs of butter, big glass banana
Buffet - tried to be sensible. Started ok, failed miserably. Lots of salad, cooked meats, slice of squishy tiger bread and butter Blush, 4 mini sausage rolls (double Blush ) - I was only going to have one but they were REALLY nice, some pickled onions, handful of olives. One gin, lots of slimline tonic.
Evening - 1/4 piece of battered cod and 1/4 portion of chippy chips. Slice squishy white bread and proper butter.

So, back on track today. Didn't get home until nearly midnight last night, so slept most of the morning.
