Am I the only person who doesn't eat the "right" meal at the "right" time. I'm generally not up until 11 at the earliest (disability and delayed sleep phase issues) so the first meal I tend to eat is a brunchy-lunchy thing (eggs, mushrooms, beans etc). Then I'll have a substantial snack (cereal/toast and cheese/fruit and cheese/yoghurt and berries) mid afternoon, then dinner in the evening. If I haven't had my HEB by nearly-bedtime, I'll have some muesli and yoghurt for dinner.
Today I got up early (9am
) to go and visit a friend half an hour away, who had a mutual friend visiting. Was v nice, sitting in her back garden chatting over coffee.
Today's food:
Brunch: Huevos rancheros (to best mate's recipe) - this served 4:
2 mini tortillas, sliced
Couple of big tomatoes, chopped
Bunch spring onions, chopped
Red pepper, chopped
Some chorizo (I picked mine out cos I don't like it), chopped
Chopped green chili
6 eggs.
Tortilla was fried in a little olive oil (am sure you could use frylight), then the veggies were added and fried off, then the eggs were added and cooked until it was done. Bloody gorgeous and only about 3 syns for 1/4 of it.
Dinner: 2 x slimming world burgers (much nicer than the meatballs), giant salad (leaves, tomato, mushroom), new pots.
Supper: HEB muesli and f/f greek yoghurt, with chopped up apple.
Snacks: 3 x mini babybel lights (HEA) and apple, melon/pineapple pot, nectarine
