Corned Beef Hash Controversy

H and I are discussing the way to make this. He’s waving a masher around and is obviously wrong.

  1. Parboil cubed pots.
  2. Fry onions
  3. Add pots to onions
  4. Brown a bit
  5. Chuck in oven with cheese on top
  6. Eat with baked beans and a fried egg.

He’s also suggesting green stuff which is so wrong I may have to kill him.

I've seen it both ways. I don't think either of you are wrong, I suspect its down to regional variation.

He's right about the masher, it's layers of mashed potatoes, onion and corned beef. Cubed potatoes are irrelevant.

I think arguably they can both work but I'm with you all the way (although definitely no cheese!).

Having said that I was brought up with carrots in too and served with mushy peas/pickled onion/beetroot rather than beans and egg.

Mash potatoes, mash corned beef in, wack in the oven so the top crisps. Serve with baked beans. Add ketchup only if you're a total wrongun.

Cubed potatoes (boiled), chopped onion and chopped corned beef, fried till it gets nice crispy bits.

No egg, just baked beans.

DP loves it and he wouldn't normally touch corned beef with a bargepole.

Ooh, sliced potatoes! Marvellous idea TheRattleBag.
Larger surface area means more brown loveliness when fried with the onion.
Dare I suggest actually adding the baked beans to the mix before baking.
Yummy and less washing up but could be a step too far.

I've never encountered a mashed potato version. I'm a Southerner, I wonder if it is a regional variation.

Anyway, according to Wikipedia......

Hash is a culinary dish consisting of diced or chopped meat, potatoes and spices that are mixed together and cooked by themselves, or with other ingredients such as onions.[1] The name is derived from French: hacher, meaning "to chop".[2]
