Corned Beef Hash Controversy

H and I are discussing the way to make this. He’s waving a masher around and is obviously wrong.

  1. Parboil cubed pots.
  2. Fry onions
  3. Add pots to onions
  4. Brown a bit
  5. Chuck in oven with cheese on top
  6. Eat with baked beans and a fried egg.

He’s also suggesting green stuff which is so wrong I may have to kill him.

I follow my nan's recipe passed down throigh generations. Cubed potatoes, carrots, onion, celery, peas and sometimes Swede. Boil up them up in some stock, oncenearly cooked drain a bit of the water out, top up with a can of Heinz spring veg soup. Add dumplings for 30 mins then corned beef cubes go in last for about 4 mins so they dont get too soggy. All done in a casserole dish on the hob then served in either a big bowl with crusty bread or a giant Yorkshire pudding. I think it's all regional. I'm in Yorkshire.

Why do they persist in using these stupid and dangerous tins for corned beef (also sardines and anchovies).
Oh and it’s mashed, not cubed.

My husband makes awesome corned beef hash, he puts mustard, Worcester sauce and usually something spicy on the corned beef and does cubed potatoes which is the fries with the spicy corned beef until it’s a bit crispy. Fried egg on top. Delicious 😋

Yup, cheese on top which melts and goes crunchy in the oven. Yum.
I also put mustard and Worcester sauce in with the potatoes.

In this house the corned beef gets cubed, the (new) potatoes boiled and then cut in half before being chucked in with the already-frying onions. Once they've got a bit of crisp to them the potatoes get sort of crushed; not mashed but not left as halves either. I also put Worcestershire Sauce in with the corned beef. Well, if it's good enough for The Ivy...

No cheese, of any description, goes anywhere near my hash. Nor beans. I mean, really. Wink

I have had both ways but for different types of meals.

Cubes with a fried egg on top when having it for brunch.

Made by layering mash, corned beef (with Worcester sauces mixed in), and fried onions and baking, served with beans when having it for dinner.

It was always a dish to use up leftover mashed potatoes when I was growing up. So mashed potato mixed together with corned beef and fried onions, fried and repeatedly chopped with a spatula and flipped so there's loads of crispy crunchy bits.
Eaten with plenty of salt and a big knob of butter mixed in. Maybe some peas if you can be arsed.

I've had it the cubed potato way too which was nice but not as nice IMO.

Gravy, cheese, egg, beans, sauce do not belong.

Oh, I make mine like a version of cottage pie, but with corned beef fried with softened onions and then I throw in any other veg I have(cooked cubed Swede is good) peas, sweetcorn anything!
Then put that mixture in a dish and put mash potato on top with a little cheese, served with baked beans

Good lord, what is this madness? Cubed, obviously. Then you give it to your child who adds ketchup, mashes it all together and eats it with lots of bread and butter.

Well mashed with butter & milk, no cheese add well cooked carrots put into pie. Cook. Eat cold with HP sauce

You're all so WRONG.

Corned beef hash is mash mixed with corned beef and loads of black pepper. Packet mash is permissible. Onions and cheese and other fancy bollocks are not.

HASH IS MASH.

You’re all wrong! Should be done in a huge pan, start with cubed potato but as you cook it with the other stuff (corned beef & onion) you toss it about a bit until it goes a bit mushy so it’s like a half mash / half cubed hybrid. Fried egg on top job done.
DM always made it more like a stew with everything swimming in gravy with loads of brown sauce and white bread - live it either way.
I must admit I really like the Jamie Oliver version with chilli in it too Grin
