Corned Beef Hash Controversy

H and I are discussing the way to make this. He’s waving a masher around and is obviously wrong.

  1. Parboil cubed pots.
  2. Fry onions
  3. Add pots to onions
  4. Brown a bit
  5. Chuck in oven with cheese on top
  6. Eat with baked beans and a fried egg.

He’s also suggesting green stuff which is so wrong I may have to kill him.

My nana makes the best Corn beef hash ever !

What we do is chop potatoes in big chunks, onions, carrots, corn beef, in the oven for abit. Usually when I do her way the potatoes become abit mashy, but i love the big chunks of it 😍

Ooh and some pickled cabbage and a bit of black pepper!

My Nan used to layer sliced raw potatoes with onions and corned beef into a casserole dish. This is then topped up with gravy and baked in the oven.

Boil potatoes. Cube onions and fry. Mash potatoes and add to frying pan along with cubed corned beef, stir until a gloopy lump then serve. Yum!

Has to be cubed potatoes, so they fry crispy, onions and cubes of corned beef all fried until crispy, make a well in the centre and fry an egg. Season as desired but certainly no stock, sauce or gravy, except Worcestershire sauce.

No beans.

I grew up with CBH as a sort of thick stew to have with dumplings. Lovely but, TBH, the drier baked or fried versions with fried egg, baked beans etc sound ever better.

It's sliced potatoes, sliced onion (maybe a sneaky carrot) layered with cubes of corned beef and covered in stock (gravyWink) then baked in the oven at our house. But I like the sound of the cheese, beans and egg in addition.

DH and I were going to enjoy dinner out tonight as DS is away on a trip. Now off to cancel reservation and go to supermarket to buy ingredients for cbh - it will be mashed and involve a fried egg and cheese and always served with a large dollop of Branson pickle. I'll eat it any which way though - when they served it in the Ivy, it was grated Rosti style as a flat pancake with a fried egg on top and ketchup. Also love it as good old Scottish stovies, and even better when it's as an open topped pie. I'm soooo hungry Grin

Give corned beef to the cat and use mince instead. Here’s my instant pot version but you can do this in a standard pressure cooker.

  1. Slice 1 onion, 3 carrots and slice some potatoes and dice some more potatoes.
  2. Put some water and a beef stock cube in the pot.
  3. Layer the ingredients in this order -> diced potatoes, onions, carrots, mince, sliced potatoes, onions, carrots, mince, diced potatoes, onions, carrots, mince, sliced potatoes.
  4. Cook on high pressure for 10 mins, release pressure slowly.
  5. Remove lid and simmer using the sauté setting, stir till the sliced potatoes have almost dissolved and add a tablespoon of bisto

Hash does not need mash!

I think I was lied to growing up my parents corned beef hash was literally boiled potatoes with corned beef chucked in. Then all mashed together and that was it with a generous helping of brown sauce.

No mash! Absolutely bloody not. Cubed potatoes that partly break down during the fry, giving semi mash, semi textured quality.

Definitely cubes, my sons MiL makes a Lancashire version which has gravy in it. Looks like dog food but is really nice.

This is the wrong place to ask this I expect but here goes, with apologies. I've seen the renowned NE parmo on tv, never eaten one. CB Hash eaters of the North, is it something people make at home? Or do you have to buy in cafe, chippie? Sorry, triggered by the cheese sauce on here. Which has no place on corned beef hash, sacrilege.

My way is exactly the same as noonemournsthewicked back on page 2. My DD used to call it corned beef mash so there's your answer!

Just remembered how my mum used to make it.

Baked potato - scoop out inside, mix with corned beef, onions and cheese, put back in potato skins and bake. Serve with baked beans. God I want this for tea now. I've got pasta Sad

Fuckload of cubed boiled potatoes
A raw onion, sliced
Oxo cube
Water
Worcestershire sauce
Oven for 40 mins

Could this be a North/South divide thing?

My parents are southern and i grew up with Hash being like a bubble and squeak affair, mash, meat and onions all fried up in a frying pan.

DH is a northerner and he calls stew hash....specifically 'Tayter-Hash'. Its a hot pot really but he thinks that is hash.

Clearly he is incorrect but i dont say anything, I just judge silently.

Yes warpdrive! Frying pan. No stock, no gravy, golden crunchy base turned out onto plate to be divided. Fried egg if you want.
