We adore dakos. I buy krisprolls and soak those, grate the tomatoes with the garlic and onions and pile on top. We have trouble getting the mizithra so we've found that cheap Greek cheese (fake feta) the closest thing.
Also from my Cretan cookbook, we do Aubergines wrapped in feta and cooked in a homemade tomatoe sauce.
Basically, I slice the Aubergines lengthways and fry them off, put them to kne side until cool enough to handle. Save the weird end pieces you end up with. Dice those pieces.
Fry a finely diced into on with the diced aubergine until sticky. Add pasta, garlic, oregano (lots!) salt, pepper, honey and red wine vinegar to taste.
Crumble a block of feta, wrap the aubergine slices around the feta, lay jn a baking tray and pour over the tomato sauce. Dot around any left over feta and bake.
But I also love a panzanella, a fattoush and tabbouleh.!
