Considering we’re at an AI hotel and eating at the buffet tonight it’ll probably be some random combination of dishes I would never consider putting together under any other circumstances.

Eldest DD and her vegetarian boyfriend are at the helm and the menu is buffalo cauliflower 'wings' with salad. Am quietly excited. DD is good with sauces and salads.

Cheaty one tonight: I batched cooked some chilli con carne. Taken that out of the freezer will make chilli cheese curly fries with homemade guacamole and salsa and hopefully some soured cream. But I can't remember if I bought any and keep forgetting to check.

Given I've been watching Motherland on repeat I fancy a massive buttery spaghetti bolognaise with grated cheese and plenty of sauce. If you haven't watched it the first episode is particularly brilliant and includes the spag bol incident.

Roasted aubergine, red and orange pepper, courgette, red onion and tomatoes, all blasted in the airfryer with med herbs, garlic and lemon juice and will cook some pea pasta later to serve with and a spoonful of pesto mixed in.

We were supposed to be having this today too! Just discovered the beef went off the day I bought it though (Friday). I haven't tried this one yet, but I usually really rate taming twins recipes for ease and taste.

We are having salmon, new potatoes and veg instead.

Greek marinaded chicken legs, baked garlic and herby rice, green beans, brocoli.

Yesterday I made Italian sausage bake with gnocchi, roasted peppers, button mushrooms and Spinach in a sundried tomato cream sauce, went down really well.

Panner, spinach and chickpea curry, homemade rotis, rice. The curry and rotis I batch made a few weeks ago and froze, so just need to re heat and cook fresh rice.

Watermelon for after. They had ones bigger than my head at the market, so it’s probably going to be with most meals the rest of the week.
