What is your favourite pasta dish?

I am doing spagetti bolognese tonight.

But otherwise i love sundried tomatos and spinach in cream; or prawns in a chilli sauce.

I need some new ideas. :)

Seafood linguine. Different seafoods like mussels, clams, some salmon etc and then the linguine tossed in hot olive oil and loads of fried garlic, all tossed together.

Penne all'arrabiata, spaghetti carbonara or spaghetti with butter, cheese and lots of black pepper.

I love pasta, prob too much. Limit myself to once a week otherwise things would be boring. I really like it with garlic and olive/chilli oil and heaps of parmesan. I tried the new tiktok (yes tiktok, im not that old!) trend with feta and baked tomatoes which was so easy and tasted great. I like it with lots and lots of veg as i am veggie - so just oven baked/sauteed and chucked in. I'll make a batch of tomato sauce and then bring some out if I fancy it. I want to try one with cavalo nero and veggie sausages (crumbled in to it as a sub for pork ones) next.

Really spicy arrabiata. I put black olives and anchovies on it which is probably sacrilege.

Also had a gnocci dish in a little Jewish restaurant in Rome which was so delicious I almost cried. Wish I knew how to make that sauce!

How do you do your sundried tomato one OP? I have that and spinach in. No cream, wonder if creme fraiche will work?
I make it up as I go along really, but bassically olive oil, a bit of minced garlic, then wilt spinach and chopped sundried tomatoes. Then i add the cream (a atablespoon at a time so it does not get too gloopy) and some parmesan. It is really really simple, but feels very full bodied and complex.

I am thinking creme fraiche may not work as well, as it would go slightly watery and a bit on the acidic side, but a bit of cream cheese might?

I am watching Rick Stein right now and he has just had a spagetti with olive oil, garlic, parsley and sea urchin roe. That is right up my street!

all'arrabiata or puttanesca - lots of garlic, chilli and slow cooked tomatoes and peppers sometimes with olives, anchovies, capers.

Cherry tomatoes, peppers and broccoli fried in garlic and chilli, with some spinach thrown in just before the pasta goes in. Yummy.

Caramelised leeks, courgette, peas, creme fraiche and either prawns or salmon. DD (nearly 4) loves it, it's quick and it's got some vegetables and protein. A win-win.

For my carbonara I fry off smoked bacon lardons in oil, lots of black pepper and garlic. I mix 3 egg yolks with lots of Parmesan (recipes I've seen said do half Parmesan half pecorino). Once the spaghetti is al dente pour on the egg mixture and use the cooking water to sauce it up.
