What is your favourite pasta dish?

I am doing spagetti bolognese tonight.

But otherwise i love sundried tomatos and spinach in cream; or prawns in a chilli sauce.

I need some new ideas. :)

Any good recipes from all you carbonara fans? I love pasta but not so much tomato based sauces.

Shameless place mark as I need to do more interesting pasta.

I LOVE prezzo's chilli salmon pasta in creamy tomato sauce.
So far never managed to recreate it at home.

Curly pasta or tagliatelli with olive oil, thinly sliced garlic, broccoli and slivers of cheese, sometimes add peas and/or broad beans.

Same kind of pasta with roasted vine tomatoes, peppers, artichoke hearts, courgettes, thinly sliced garlic and olive oil. Sometimes with feta or halloumi if I have some.

I'm not a fan of sauces but a carbonara without meat or a tomato sauce without meat at a push.

I always thought I didn't like ravioli but then I realised there was more to it than those tins of Heinz ravioli in tomato sauce! Well made ravioli is possibly my favourite pasta dish now I know that!

Tortiglioni baked in extraordinarily garlicky tomato sauce with mozzarella dotted throughout and Parmesan on top. Baked till too too is going crunchy. The rest stays soft and melted etc

Honestly could live on that fir the rest of my life - I limit myself to once a week tops or I’d be the size of a barn - I eat a lot of it. Here we go - just thought Oo I could have that tonight.

For my carbonara I fry off smoked bacon lardons in oil, lots of black pepper and garlic. I mix 3 egg yolks with lots of Parmesan (recipes I've seen said do half Parmesan half pecorino). Once the spaghetti is al dente pour on the egg mixture and use the cooking water to sauce it up.
That's how I do it, minus the garlic as I'm intolerant. Carbonara is a good one but I can go off it.

I like pasta but it has to be done nicely. Bad pasta - like the Heinz ravioli kind - put me off it for years! It's a new world when you find out there are nicer ways to eat it.

I am Italian. Even if I am not crazy about pasta, I grew up eating it at almost every meal.
My favourites are:

  • lasagne
  • gnocchi with bolognaise sauce
  • filled pasta (tortelli, tortelloni etc) with sage butter and lots of parmesan cheese on top
  • ricotta and spinach tortelloni bake
  • seafood linguine
  • spaghetti carbonara

There was a pasta dish I used to eat that had vodka in it - not my favourite but it was at a trendy Shoreditch 'canteen' where I used to work:-

Shell pasta with a cheese sauce, tuna and tomatoes (plum peeled) is yummy and easy.

I also love a pasta bake (shell pasta again) which is mixed into a ratatouille with a cheese sauce and topped with bacon and baked. Very carb heavy. But yummy.

The best carbonara I've tried is the Jamie Oliver courgette carbonara. Is an absolute favourite here.

tuna, black olive, tomato and oregano. I like it because it is made with storecupboard ingredients which makes it really satisfying. I drizzle nice olive oil on top.

  • Fry up lardons, courgettes, bit of garlic and then add cream. Simple and delicious. Also works with other green veg like broccoli or asparagus but courgettes are the best for some reason (and I’m not a big courgette fan).
  • Gnocchi with blue cheese, cream and wilted spinach.
  • Pasta bake with tomato sauce and mozzarella

These are my top three. I also love linguine with crab, chilli and garlic' spaghetti alla vongolo, carbonara, bolognese, lasagne, alio e olio...

Need to look up recipes for Alfredo and alla Genovese, I had forgotten about those.

Not really a recipe, but it does taste good.

Put some chopped chorizo, sun-blush tomatoes and diced hot pepperdew peppers (from a jar) in a pan and cook off for a bit, then stir in some ajvar, let it bubble for a minute then add a little bit of the pasta water. Last, stir in a bit of chili pesto and add the cooked pasta. Serve with lots of grated parmesan (of course!)

*I forgot the N'duja - that goes in after the ajvar and needs to be smooshed up with the back of the spoon so it disintergrates into the sauce.

One of my current favourites is a variation on Alison Roman’s Caramelized Shallot Pasta:

My DS hates anchovies so I chop up some chorizo sausage instead and fry with some very finely sliced onions or shallots on a low-medium heat for about 20 minutes. I then add about 1/4-1/2 tube tomato purée and cook about 5-10 more minutes. While this is happening I boil up spaghetti, but about 3 minutes before the packet would say it’s ready take it out of the water with tongs and put it straight into the pan with the chorizo, onions and tomato purée. Take a cup (around 250ml) of the cooking water and add to the pan with the pasta and tomato purée and put back on the heat for about 3-4 minutes, stirring all the time so the pasta gets fully coated and saucy. The cooking water is essential!

Store cupboard saviour!

Caramelised leeks, courgette, peas, creme fraiche and either prawns or salmon. DD (nearly 4) loves it, it's quick and it's got some vegetables and protein. A win-win.
I love the sound of this one. I might use cream instead of creme fresh though.

A really good Napoli or tomato and mascerpone sauce with al dente pasta, fresh basil and black olives ... even better with chicken meatballs

At home Chicken Alfredo or Beef Stroganoff (both very easy and very rich and creamy).

Eating out I would go with something creamy with Salmon or lobster (don't make at home because dh, ds not keen).

Not keen on other tomato based sauces other than home made spicy bolognaise.
