What is your favourite pasta dish?

I am doing spagetti bolognese tonight.

But otherwise i love sundried tomatos and spinach in cream; or prawns in a chilli sauce.

I need some new ideas. :)

I love pasta except I don’t like it al dente! Which I know will horrify some people. I always cook my pasta for a good 20minutes Grin I don’t have any amazing recipes to share, but reading with interest as although I don’t dislike tomato, I am bored of tomato based sauces.

This thread has made me so desperate to go for a long lunch on a Sunday at a small, family-run Italian restaurant with a group of friends... delicious pasta, wine and good conversation. And tiramisu for dessert.

Creamy pesto pasta. The best thing is that my kids love it and it's so cheap and quick to make.

Other favourites here are Pasta Norma (with aubergines) and Pasta Primavera, which is more American than Italian, but a good way for using fresh green vegetables.

I thought of two recipes. I haven't tried this yet but have it bookmarked for when veggie DS is allowed to come home. Veg Lasagne

Also I make Spaghetti Rustica copied from a dish I had in a restaurant. For a veggie version I use cashews

Thin spaghetti with crispy pancetta, king prawns, green beans, shallots, chilli
and garlic finished with freshly grated pecorino.
Serves Two
150g thin spaghetti
Two rashers bacon cut up small
8 large prawns
1 small onion diced
3 cloves garlic
1 red chilli
Handful of green beans cut into 2 cm bits
A few tiny tomatoes
Some Italian cheese

Spaghetti Vongole. Waitrose (and I am sure others) sell packs of frozen clams, huge, fat and juicy. They are so good. Garlic, Olive Oil, White Wine, Clams, pinch of chili flakes, a few halved cherry tomatoes, parsley...... love it.

One of my go to pasta dishes that is quick to make is creamy Stilton and mushroom. Fry some onions and mushrooms until soft, add double cream, crumble in Stilton and stir until the Stilton has melted then stir through cracked black pepper.

Really (as an Italian) all the creamy pasta's are just not good. You rarely get them in Italy, very much an American/English construct.

Good sausages, preferably herby ones, slip off skins and pan fry, breaking them up into lumps.
Boil pasta.
Tear up some kale, put it in sieve in sink with a jug or bowl under.
Pour cooked pasta into sieve over the kale, bung lid over to keep steam in to wilt the kale.
Add some Philly cheese to pan with cooked sausage, add some pasta water, good squeeze of lemon and black pepper. Stir to make smooth sauce.
Stir in pasta and wilted kale. Coat with sauce and serve.

Cheesy pasta bake for comfort food.

If I've a bit more time, stroganoff with tagliatelle.

Delia's leek and bacon pasta bake, which I make with veggie bacon. I actually prefer veggie bacon for things like pasta. It takes a while to make because of the bechamel sauce, but is really lovely.

I like creamy pastas. Carbonara, macaroni cheese or alfredo are my favourites. Anything with parmesan and cream!

I love proper carbonara. I grew up going to the type of Italians that out tons of cream in and it was so sickly. Was such a revelation to try a proper one at 20 🤣

There's a place near me does a wonderful one just mozzarella, tomatoes and basil it's so yummy.

We go to a lovely Italian restaurant in Weston-Super-Mare and I always have tortellini in a creamy beetroot and pistachio sauce.
I saw a recipe for creamy Cajun chicken. pasta recently, must remember where snd try it out
Otherwise, a really lovely pomodoro sauce
