What is your favourite pasta dish?

I am doing spagetti bolognese tonight.

But otherwise i love sundried tomatos and spinach in cream; or prawns in a chilli sauce.

I need some new ideas. :)

I just fry garlic and onion together with wjatever veg I have, pour in passata and let it simmer 20 mins then stir through some cheese

I like ricotta and brocoli spaghetti. Or tortellini, but I don't tend to do a "sauce", just cheese on top!

I'm a fan of hot bunny pasta sauce, which is a spicy, garlicky carrot based sauce.

Caramelised leeks, courgette, peas, creme fraiche and either prawns or salmon. DD (nearly 4) loves it, it's quick and it's got some vegetables and protein. A win-win.
I do very similar one but with mushrooms. Mushrooms stir fried, then stir in creme fraiche, some cayenne pepper, then throw in some tinned or fresh salmon and serve on tagliatelle. Delicious. Can be made with low fat creme fraiche or single cream depending how rich you want it.

another vote for homemade pesto, potato and beans.
also normal tomato sauce with a dash of cream, and some globs of mozz.
off to Google pasta grannies to see whether they'd approve Grin

Chicken and chorizo pasta is lovely !
Sometimes I replace the chicken with boiled eggs yum 🤤 x

For something from left field, ottolenghi’s dal pita made with broken up lasagne sheets is one of my favourite things to eat. I made it out of curiosity about whether it would work or be disgusting and it’s lovely. Also freezes well.

It really is lovely @Stovetopespresso, if you don't have cavolo nero he recommends using spinach instead.

For me it's a really good quality lasagne or some sort of ravioli where it's so rich that a few pieces are enough to fill you up But my mouth is watering reading some of these suggestions!

I'm interested to know if any one has tried the Marcella Hazan famous tomato sauce which is basically a tin of tomatoes simmered with a lot of butter and a halved onion, then the onion discarded. All the reviews say it's amazing, but it is a lot of butter...

Spaghetti bolognese is an obvious winner.

Our favourite at the mo is Louisiana chicken - spicy chicken in a spicy white wine and creme fraiche sauce with peppers, onions and cherry tomatoes.

I love a tuna pasta bake for comfort food and it makes good cold leftovers. Tomato based sauce, lots of onions, peppers, sweetcorn, mushrooms etc.

Also a sausage pasta where you squeeze out the sausage from the skins then onions, peppers, mushrooms etc. and fennel seeds and herbs with a tin of tomatoes or passata.

Ok so basically I like tomatoey pasta sauces with onions and peppers and then vary them! I can't eat cream so I guess that's where it comes from!

@RokosBasilDish I normally just eat this when I’m in Tuscany (in my pre covid life haha) but I think you can get wild boar from various game suppliers if you google it :)

No, they don't seem. I suppose because there's only four of them and there's lots of bold other flavours going on. I think you could leave the achovies out if you wanted to go vegetarian and not lose too much out of it unlike something like pasta putanesca, for example, where the anchovies are absolutely key.

Here’s the duck ragu recipe which I got from someone linking it here. It’s amazing. Don’t forget the milk though, weirdly it makes a lot of difference!

I love a good pesto with spaghetti - I add green beans, mushrooms and brocolli too plus lots of cheese. I don't eat tomato as it gives me awful reflux and I'm not massivly keen on cheesy sauces. I don't eat pasta often nowadays but if I do it is always with pesto.

Defo arrabiatta but only if sauce made with 4-6 tubs of peeled vine cheery toms and slowly simmered til reduced and sweet and delish (plus lots of chilli, obvs)

@SinkGirl oh yes, the duck ragu is awesome. I've made it with goose legs a couple of times too, which worked really well. Need to brown them in the oven first though to render some of the fat out.

@FreeFallingFree, I have tried that version of tomato sauce. Initially, I did the recipe as written and it just did not suit my taste as I grew up not eating butter. I bastardise it by just adding a bit of good olive oil at the end and it is the basis of many of my sauces and use as is for my pizza sauce.
