Woke up at stupid o'clock and started a mental rummage through my cupboards and fridge. Have got up now leaving DP (who's 150 miles from elderly family and a bit down) in bed, and decided to make a lemon/orange drizzle cake. Haven't got a loaf tin but got something in remotely the right shape. Also only have duck eggs (as they were the last ones left when I last went shopping.) I will post a pic when it's ready....hope it's edible, don't fancy slinging out a load of perfectly good ingredients!
Anyone else baking today?

Melt in the middle chocolate cookies I've put on sooo much weight because I had a slice of banoffee pie every day last week

Either sub the unsweetened chocolate for dark high cocoa content and cut down the sugar a bit, or use cocoa powder and a bit of extra butter.

THE best brownies, if you like a fudgy one, is this one. Works every time.

I made her recipe for homemade Nutter Butter cookies tonight (an American peanut butter shortbread sandwich biscuit filled with peanut butter cream). Yum.

The recipe above I made the other day and it was amazing. If you like a chewy fudgy brownie that isn't cakey than this is for you. I also prefer all cocoa in the recipe and just add choc chunks at end as imo it makes a richer brownie.

DH came home yesterday with 36 large eggs - I had asked for 6. I have a grocery delivery for Thursday with 18 more eggs on order!

Made a raspberry custard cake that has eggs in the cake batter and also eggs in the creme patissiere. I’m going to make a brioche tomorrow and homemade pasta.

How long are eggs good for?

Well I've officially ran out of flour now Sad and can't get hold of any. I cannot justify buying a giant sack online as sadly works out as much more expensive then I normally pay when worked out. Made a vanilla cake with the rest of what I had.

I will just do fridge cakes and flapjacks etc that dont require flour until I can get it again

@Christmastreedown I'm really surprised about the eggs, we can get them from the milkman, the corner shop and most of the times I've been in the supermarket though we have had 10 or two 6s substituted for 12 in one or two click and collect orders.

Just finished slicing a raisin and cinnamon loaf via the breadmaker. There is something about freshly baked bread that makes a kitchen smells divine.

@drspouse thanks yes we made some flourless peanut butter cookies alittle while ago to test a recipe, they were surprisingly nice but still miss my flour.

I find that getting eggs is not a problem now - the issue is that they are small or medium ones and most recipes ask for large eggs so I need to approximate the volumes of eggs required.

In terms of flour, it seems to be toughest to get strong white bread flour, rye flour, and pasta flour; plain flour and strong wholemeal seem to be readily available. I have been successful in sourcing some from local bakery/restaurants and also from the company which normally caters to DS's school. There is flour out there, just that the small bags are in high demand and the large bags which used to go to caterers are languishing about.
