What are you baking today?

Woke up at stupid o'clock and started a mental rummage through my cupboards and fridge. Have got up now leaving DP (who's 150 miles from elderly family and a bit down) in bed, and decided to make a lemon/orange drizzle cake. Haven't got a loaf tin but got something in remotely the right shape. Also only have duck eggs (as they were the last ones left when I last went shopping.) I will post a pic when it's ready....hope it's edible, don't fancy slinging out a load of perfectly good ingredients!
Anyone else baking today?

Ds2 made hot cross buns this evening.
Toby has been baking - hot cross buns.
Mixed in the bread maker, then formed & left to rise for 30 minutes, then baked.
Delicious!!

I made doughnuts for the first time today and they are AMAZING! I don't usually have the patience for anything that needs to rise... But I was having such a bad day today, this seemed the perfect use of my time this afternoon. Now I just have to stop myself from eating them all on my own :-)

Its 1am and very clicked on this thread, I'm now feeling very hungry and greedy because I want to eat everything everyone has mentioned so far.

I'm thinking of making sea salt fudge today and posting it to relatives who I think need a pick me up. They'll only get enough to fit in large enveloped though (no getting fat in this lean times!), so I can print the postage online and slip it into the post box..

I made the easiest apple batter cake to use up the apples that nobody wants to eat.
DS can add it to his dessert repertoire of tiramisu, millionaire’s shortcake and Rice Krispie buns!

😢😢I'm low carbing to control my blood sugars (T2 diabetic). I'd love some cheese scones. I'm not particularly a sweet tooth but some of these cakes look very nice!!

Me and DD are having our own great brutish bake off on Thursday, if I manage to get the extra bits we need from shopping on Wednesday. We're making: biscoff blondes, lemon cheesecake and cream egg loaf cake

So far during lockdown I've made:

  • Toffee Chip cookies
  • Oatmeal Raisin cookies
  • Honeycomb
  • Loaf bread
  • Sourdough starter is on day 5

Tomorrow I'm planning on Mini Egg Blondies. And maybe Hot Cross Buns.

I'm definitely going to gain 10st...

Soda bread with caraway & fennel seeds. I started making soda bread last week when the only flour I could find was plain flour. It was so nice that DH asked if I could make it regularly even though we now have a bit of bread flour. It's really quick, a loaf takes 45 minutes tops from start to finish. We're having it this evening with home made soup

Ok where am I going wrong with brownies, please help. I have a crumbly tray of something like dry cake mix. There are so many wildly different recipes. This is the one I’ve been using. I only cooked for 20 minutes.

I've been using this recipe for soda bread although there are loads and loads of others online
I used natural yoghurt + water, because it's much easier to find than buttermilk, and a mix of half white plain flour and half buckwheat or wholemeal spelt flour (we prefer a wholemeal bread but spelt/buckwheat was all I could find for plain flour - thanks to Holland and Barrett who I never before realised do stock flour and are open!) It makes a very rustic and crusty, but very tasty, small to medium sized loaf

If you can't get buttermilk you can DIY it.
Put 1TBS lemon juice in measuring cup and fill with milk so together it's at 8oz. Give it a stir and leave for 5-10min
