Woke up at stupid o'clock and started a mental rummage through my cupboards and fridge. Have got up now leaving DP (who's 150 miles from elderly family and a bit down) in bed, and decided to make a lemon/orange drizzle cake. Haven't got a loaf tin but got something in remotely the right shape. Also only have duck eggs (as they were the last ones left when I last went shopping.) I will post a pic when it's ready....hope it's edible, don't fancy slinging out a load of perfectly good ingredients!
Anyone else baking today?

I'm making fruit and nut banana bread so that the bananas dont go to waste. I really want to make flapjacks but cannot find oats anywhere!

A Barm Brack (trad. Irish fruit ‘bread’) to use up some of the GF flour that’s been sitting in the cupboard for ages after I used it for a GF guest. It’s well out of date but smells fine.
Dried fruit (left over from Christmas) is soaked in cold tea overnight, which I hope will counter the typical GF dryness.
Recipe uses no butter and only one egg. Fingers Xed it’ll be edible.

Looks lovely. To get a sugar crust you need to make the drizzle with more sugar than it says you need. So it can't all dissolve into the juice.

DH will probably make some flapjacks today. He is not the best baker, but I am working from home so can't bake until evening.

I've got the ingredients to make banana bread, chocolate and hazelnut cookies and flapjack. Also for a bag of bread flour but it's very dangerous to make bread because then I will use all my butter when devouring the warm loaf.

Banana loaf in the oven as DD turned her nose up at the ones in the fruit bowl. Might make some peanut butter cookies later.

Using the last of the strong white flour to make my first ever sourdough loaf. It's rising now (takes 7 hours to rise apparently!).

Fat free fruit tea loaf is brilliant, only uses one egg and no fat. Can reduce the amount of sugar in it, swap the dried fruit for any other dried fruit, and can use fruit tea or water, rather than normal tea. This size fills a 2lb loaf tin completely, or a smaller loaf + a 1lb tin. Can also change the spice for whatever you like.

Oaty biscuits at 1p each these are another favourite, so versatile. No eggs or butter needed, just veg oil. Half the recipe is fine for an average family, the full amounts make about 30 biscuits. Could add a drizzle of melted choc over them, or leave out the sugar and mix in a little cheese/marmite/seeds/herbs for a savoury version.

I searched through my cupboards for odd things to use up and found this recipe that used a block of marzipan left over from Xmas, some old polenta and rhubarb from the garden. It is amazing, the whole family love it.

I’m going to make instant pot Chicken Cacciatore (to use up some puréed tomato’s as the use by date was yesterday!)

Yesterday I made whole dried peas curry (much nicer than it sounds!)

Tomorrow I’m making cabbage curry (also better than it sounds)

Hoping to finally get round to beetroot curry as well (this will be a first!)

We found a jar of mincemeat in the cupboard so have some mincemeat shortbread in the oven. It smells amazing.

I'm having a savory day, so a couple of quiches and some pasties. DS came home from uni on Friday and with no prior warning announced he's given up meat. Hadn't really factored that in when stocking the freezer.

@Spam88 I don't know how old your DD is, but if she is like my DC, just wait a couple of days til the apples are going a bit shrivelly despite you saying each day "eat some fruit"...sigh.

Although if you're eating it as a crumble you're still eating them anyway just as you would be eating them whole, but they will go further and could involve custard

I made focaccia for the first time last night... was really lovely. DH is a keyworker and came home 'starving' and all I had planned was a pasta and sauce tea. He asked for garlic bread but got none. So hence the focaccia!

Today I have made some veg soup from all the odds and sods in the veg basket.

We have some forced rhubarb from the allotment so I am making a crimble crumble later.

And ...I am doing some ironing!!!!!!!!!!!!

Gluten free carrot cake muffins - plan to freeze some but wondering how the cream cheese frosting will respond to freezing
