Woke up at stupid o'clock and started a mental rummage through my cupboards and fridge. Have got up now leaving DP (who's 150 miles from elderly family and a bit down) in bed, and decided to make a lemon/orange drizzle cake. Haven't got a loaf tin but got something in remotely the right shape. Also only have duck eggs (as they were the last ones left when I last went shopping.) I will post a pic when it's ready....hope it's edible, don't fancy slinging out a load of perfectly good ingredients!
Anyone else baking today?

@Mominatrix it would depend on what you were baking of course, but for a basic sponge cake I weigh my eggs then just add the same weight of flour/butter/sugar. It seems to work well, it's a method my mother taught me (I also still weigh in imperial though so feel free to disregard any advice Grin)

WeBuild, I agree that weights would be the best way out of this. The only recipes i have which list egg quantity in weights is the BraveTart book.

What does a large egg weigh and does it matter that the ratio of white to yolk is different in a small or medium egg?

I suggest you weigh the eggs, however many you are using. So if the grams weigh 140 grams, I would use 140 g fat, 140 g sugar and 140 g flour

I was told it doesn't really matter and if a recipe calls for large eggs to just use medium in its place and it is fine

I find that most of the time I can get away with smaller sized eggs to what the recipe asks for. But because the mixture might be slightly stiffer because there is slightly less liquid in the mix I sometimes add a little milk to the mix to slacken it a bit before putting it in the tin.

Bread day today. Expired spelt flour should be okay, shouldn't it? If it looks and smells okay once opened and has nothing crawling in it? If so, today will be spelt bread day. If not, it'll be some weird self-raising flour "bread" day.

If there are no added weevils I would totally use the flour!

I usually make a three or four egg cake batter and the eggs tend to weigh about 6.5oz/8oz (think about 180/230gm?) respectively but I just weigh however many eggs I am using first then mix. I don't think I need to deduct for the eggshell once they are broken.

I made British Rail gingerbread for the second time. It was a disaster this time. Came out tasting like bread, stuck to the tin, just so disappointing.

I'm a bit late to the party but I made a chocolate orange drizzle cake on DS2's suggestion.

I found a chocolate loaf cake recipe and just put orange zest in the batter and topped with an orange juice drizzle.

I'm not one to blow my own trumpet but it's really good, especially if you like a rich, decadent treat Grin

My teens are baking in the kitchen for my birthday 😁
They know I love chocolate, so are making chocolate cake, chocolate and pecan cookies and chocolate cornflake cakes.
Apart from all the lovely scoffing to look forward to, the best present is hearing them singing and laughing together. They don't usually get on, but lockdown seems to have changed that.
