What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Tuna salad with leaves, grated carrot, pickled gherkins and sliced apple , don’t really fancy it but the salad is starting to look v tired and there’s no way I’m chucking anything in the bin.

We had burgers last night, mixture of meat and veggie as didn’t have enough of either type. Dregs of a bag of chips meaning we had about 6 each, carrot and cucumber sticks, radishes and tomatoes.

Tonight I need to make something involving bacon and broccoli but I’m not sure what. Maybe pasta but then we will have no pasta left which worries me slightly as it’s the meal my 4 and 1 year olds are guaranteed to eat. I have ordered more in my online shop so hopefully would only be out of it for a day as long as it turns up...

We had Thai red chicken curry and rice. Had some chicken breasts in the freezer and found the veg a mix of fresh and frozen

mooboy · 25/03/2020 07:11

Spicy root veg casserole - very comforting. Tonight we'll have chicken, bacon, leeks, peas and new potato traybake type thing.

Sexnotgender · 25/03/2020 07:26

Aubergine lasagna.

Ni58 · 25/03/2020 07:51

Last night DD had a burger with Doritos and some cherry tomatoes. Later in the evening, we had chicken and mushroom orzotto. I doubled the quantities of orzo and cheese so that it made four portions rather than two. Thought it might be stretching the chicken a bit too far but it was fine. Put the leftovers into Tupperware. Will it freeze? I'm quite enjoying being more resourceful and less wasteful - should have been doing this kind of thing all along. 🤦‍♀️

Our lentil soup last night was delicious. I added a tablespoon of curry powder and we had it with the last of the bread.

I am hoping DH makes more bread today.

Pasta something tonight I guess. Probably a pasta pesto.

Spam88 · 25/03/2020 09:35

Going to do something along the lines of a tomato and feta tart tonight with a roll of puff pastry I've got in the fridge. Going to save half the pastry for a banana tarte tatin.

mbosnz · 25/03/2020 09:37

Macaroni cheese tonight. Astonishingly, I have sufficient of all ingredients to make it my usual way!

thecatschampagne · 25/03/2020 09:56

Mackerel fishcakes for lunch today made with some potatoes that are looking very sorry for themselves. Have some capers and a carrot I will grate in to balance the salty fish a bit. Have half a red cabbage so might make a coleslaw.

Tesco supposedly coming at 6 tonight with dinner...creamy white beans with basil oil and crusty rolls.

BearSoFair · 25/03/2020 10:18

Sweet and sour chicken and noodles tonight. Found a jar of sauce in the cupboard that I don't remember buying but is in date til May so using that up!

Connie222 · 25/03/2020 10:33

I’ve got potatoes, leeks and carrots that are looking a bit sad so I’m going to roast them all and then add a random jar of lasagne white sauce, cover with cheese and have a veg bake.

P1nkHeartLovesCake · 25/03/2020 13:38

Tonight we will have spicy coated chicken breast from the freezer, mash, peas and asparagus

PrincessHoneysuckle · 25/03/2020 13:42

HasaDigaEebowai · 25/03/2020 15:01

Stir fry chicken tonight (quorn for DS1). I have peppers and mushrooms to use up and spring onions from the garden. Then pineapple and icecream for pudding.

pallisers · 25/03/2020 15:03

Either shepherds pie or spanish chicken and rice.

Iamblossom · 25/03/2020 15:04

Boys are having cauliflower cheese with sausages.

I am having soup.

DH is having lentil and vegetable curry - he made a big batch of it on Monday and we have got 4 meals out of it so far with probably another 3 more to go.

Carrie7469 · 25/03/2020 15:06

Pasta, pesto and Parmesan

delilahbucket · 25/03/2020 16:25

Fish tacos today. Could have jumped for joy when I got some tortilla wraps in Aldi today as I couldn't find any last week!

SpratsOnParade · 25/03/2020 17:16

Chilli with garlic bread.

drspouse · 25/03/2020 17:43

Bacon and pea oven risotto. Going out for my constitutional while it bakes.

MoonlightMistletoe · 25/03/2020 18:16

I made a pizza for the kids with some mixed herbs in the dough, topped with peppers and frankfurter sausage, with wedges on the side.

Twospaniels · 25/03/2020 18:20

Well 2 nights ago husband made shepherd’s pie. Tonight we’re having what’s left of it together with cauliflower cheese (as there’s not quite enough pie for 4 so packing it out a bit)
