What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Nettle soup from the freezer for me and DH
Quorn fishless finger wraps for DC.

Plus a gin for me as it’s the last working day of the week!

FireandFury · 07/05/2020 17:41

Well it was to be chicken stir fry but DP is threatening to order a Chicago style pizza from our local.

I think I’d rather boat loads of gin and tonic.

Scrambled eggs with bacon, mushrooms and crumpets.

Bloodybridget · 07/05/2020 18:03

Dhal, roasted cauliflower, brown rice, nan.

Raera · 07/05/2020 18:38

@mbosnz. Your lamb recipe pretty please?
I'm doing the below but I have no swede and only 1 potato so the layers are potato and courgette. (And doubled up on the spices!)

Meatballs and sausage pasta (didn’t have a big enough pack of meatballs) using up the wrinkly peppers and cherry tomatoes. Also did one of those wanky decorated focaccia breads.

Lordfrontpaw · 07/05/2020 18:50

I’m having macaroni cheese. The macaroni cheese thread made me.

iBos · 07/05/2020 19:20

We had frozen pizza tonight. I’ve had a blinding headache most of this week and just couldn’t be bothered to do much cooking.

Raera · 07/05/2020 21:56

@iBos
Thanks, looks lush!
Lamb fillet is lovely but very expensive, would it work with any other meat do you reckon?

happypotamus · 07/05/2020 22:00

Takeaway curry. Prawn dhansak, pilau rice, a few of DH's chips, veg samosa, poppadums and dips. Am now stuffed.

Wednesday ended up being turkey chilli. I stayed out of the kitchen as there were fireworks between the normal chilli chef (who makes it with beef) interfering with that day's chef (who is admittedly a messy chef!! but had a plan and will do a better job if left alone to prep, tidy up and then start cooking, and was also working to a different recipe than the "traditional" one for this house) - I retreated to the garden with gin and became a counsellor to both sides....Grin - the end result was good though.

Yesterday, it was "freezer surprise" curry night - I made fresh puppodums to go with what I thought was 5 single (small) portions of curries - turns out that the 3 tiny ones I knew were the same, were indeed the same, but roasted tomato sauce for pasta. OOps. But we had enough in the other 4. Just. I'll use the tomato sauce another time (I had already fully heated it so refroze).

Tonight, its takeaway and I think DH wants pizza.

I actually have not much of a plan for the weekend or next week, except that we will have a nasi goreng one night (Indian stir fried rice dish) and something with mussels another night (risotto, pasta, Asian broth....something).

BiddyPop · 08/05/2020 10:16

Oh, and a mac'n'cheese as I've been wanting one for weeks now!

mbosnz · 08/05/2020 15:31

@Raera I don't think it would really work with anything else - you could try beef though. One thing, it doesn't take a lot, because it's there as a flavouring, rather than being a significant part of the dish, if you know what I mean - a little goes a long way.

Tonight we are doing burgers on the barbie, and home-made chips.

abitoflight · 08/05/2020 15:50

Caesar salad yesterday
Pulled pork tonight - just put it in the slow cooker
Vegetarian curries tomorrow
Rack of lamb on Sunday
Then the fridge will be empty and no clue for Monday other than I have halloumi to use up and peppers so halloumi fajitas maybe

H1978 · 08/05/2020 16:11

40somethingJBJ · 09/05/2020 19:07

We had nacho chicken (chicken breasts topped with salsa, crumbled up nachos and grated cheese) with jacket potatoes and coleslaw.

MintyCedric · 09/05/2020 19:26

Chilli and Lemon salmon with broccoli spaghetti ...making the most of The Teen being at her dads as she's not keen on fish.

drspouse · 09/05/2020 19:30

DH made hot dog buns as we had some hot dogs that were use by today. With fried onions!

IHaveBrilloHair · 09/05/2020 19:34
