What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

We had our main meal at lunchtime today since the DCs were apparently "starving". Pasta bake made from the remains of yesterday's roast chicken and various random things from the fridge and freezer.

PrincessHoneysuckle · 23/03/2020 18:18

Roast chicken,mash,carrots,peas and homemade yorkshires

mygrandchildrenrock · 23/03/2020 18:25

Chicken and veg in white sauce with rice. Left over from yesterday’s roast. Then tomorrow leek and potato soup with the stock from the carcass being in the slow cooker overnight.
I know it’s only 3 meals from one chicken but I would like a round of applause please!

Halloumi traybake. It’s supposed to have chickpeas in but I’ve only got one tin so I’ll leave them out. It has potatoes so should be filling enough.

bruffin · 23/03/2020 18:44

Lamb meatballs with feta and tomato and spinach sauce and pasta

thecatschampagne · 23/03/2020 18:56

I can get hold of almost everything as normal but being stuck inside (we're both wfh) I'm finding the challenge of cooking with limited ingredients, rather than popping to the shop to grab xyz, is keeping things interesting.

We had mushrooms on toast (bread I would have usually thrown away) for lunch. Dinner is crispy chicken drumsticks and stewed root vegetables with wild garlic.

I made a banana and date loaf this afternoon for breakfasts this week, and I might make some granola for any snacking emergencies.

Maccy D’s. DD had her last happy meal for a while and mine was an NHS freebie

YDYtrue · 23/03/2020 21:43

We had roast chicken yesterday and today chickpea and spinach curry, rice and homemade naan. Still managing normal meals but only have one meal of fresh veg left

I was at work where we only have 1 break in the early afternoon. We had a free McDonalds (they were giving away food for NHS workers). I had chicken nuggets and fries. They were cold by the time I got chance to eat them. I am starving now but can't work out what to eat from the selection of food we have in the house.
Before you ask, only 1 member of staff went to mcdonalds in her break time to bring back food for all of us, so we didn't all waste time or take the risk of standing close to people.
DH and DC had a stir-fry of veg and tofu with rice.

Zisforstripyoss · 23/03/2020 23:46

We had corned beef hash for lunch as I work evenings.

Dinner was dippy egg & soldiers for the DC, hot cross buns for DH and instant noodles for me.

Classy.

We had a Tesco delivery this morning and got most things so we are well stocked. I've meal planned and we should be able to eat normally for most of the next two weeks, bar fruit which won't last and eggs which I forgot to order (may well not have come even if I had remembered them). I'm being very careful to include all leftovers in our plan, so tonight's dinner was a mixture of leftover and fresh sausages, some leftover roast dinner, mashed potatoes, leftover corn on the cob for the children, cauliflower cheese and carrots. It all went very nicely together.

ThatsNotMyPuma · 24/03/2020 06:00

Freezer surprise here tonight.

Spam88 · 24/03/2020 11:36

I've got a cauliflower and some mushrooms that are a bit past their best so I'll probably do a vegetable curry tonight. Would normally include chickpeas but there's not a chickpea to be found round these parts. All out of lentils too. Might add some sesame seeds to the rice for protein (I did manage to get plenty of meat in the shop today but seems a waste to use it in a curry!).

Sexnotgender · 24/03/2020 11:39

Tonight will be giant couscous salad with roasted cauliflower and halloumi.

Apolloanddaphne · 24/03/2020 11:45

I am making lentil soup for lunch with some bacon that needed used up and some sad looking carrots. For dinner I am making a chicken and chick pea tagine with couscous. I am rather enjoying the challenge at the moment of using up what I have so I limit my trips to the supermarket.

TwoZeroTwoZero · 24/03/2020 12:07

We're having sandwiches for lunch because we might as well use the last of the cheapy crappy sliced bread that I got last week and there's a chilli in the slow cooker for tonight and tomorrow. No odd or unusual combinations for us at the moment!

Rockbird · 24/03/2020 12:25

Not bad Tesco delivery this morning so we're not badly off. Stir fry with chicken and lots of veg tonight as we had cheesy pasta and sausage rolls for dinner last night!

AtLeastThreeDrinks · 24/03/2020 12:31

We're onto freezer meals and lentils, can't get anything fresh. So tonight is bean chilli from the freezer (that I'm hoping will stretch!), rice and some guacamole that may be on the turn…

I bet those preppers are super smug now. Honestly slightly concerned for when we run out of tins in a week's time! Can't seem to get anything at all.

WatermelonEatingCat · 24/03/2020 12:33

Oh!! Lentil soup. Great idea. :)

mbosnz · 24/03/2020 12:54

Chicken casserole with heaps of vege, particularly enjoying the mash. . .

PrincessHoneysuckle · 24/03/2020 13:14

Lasagne. Will be last one for a while as cant get lasagne sheets anywhere

BearSoFair · 24/03/2020 14:19

Burgers but as sandwiches rather than in rolls, I thought we had rolls in the freezer but I was wrong and I'm not going shopping just for that!

lifeisgoodmostofthetime · 24/03/2020 14:29

Chilli potato's, mushroom 65 and a huge salad.

Whattheduck · 24/03/2020 14:37

Shepherds Pie with cabbage and carrots followed by an apple and raspberry crumble I made yesterday but we didn’t eat

AdaColeman · 24/03/2020 14:53

Bacon and fried tomatoes with dippy bread, using up fridge remnants.
