What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Butter "chicken" using sauce from a sachet that I bought the other day. We're making it in the slow cooker and we'll have it with naan breads or rice. It should be enough to feed us for today and tomorrow.

Sexnotgender · 21/03/2020 13:06

Creamy coconut lentil curry with rice and paratha.

Sexnotgender · 21/03/2020 13:07

Sorry about your wedding, my brother had to rearrange his to October, hoping that’s sufficiently far enough away!

Cottage pie for us. Found mince, onions and potatoes easily and we'd plenty carrots. Might bulk it out with green lentils.

delilahbucket · 21/03/2020 13:16

Making a big batch of chilli and having some with nachos, cheese all the trimmings. Also someone who has spent the week putting in a plan of action to cancel their wedding here OP, so I totally hear you on the comforting carbs.

BlueMoonRising · 21/03/2020 13:18

Ooh, that does sound good. I have everything other than the bruschetta. Wonder if there's been a rush on that locally...

JiltedJohnsJulie · 21/03/2020 13:19

Potato and cauliflower curry with rice. Our supermarket was fully stocked with fruit and veg when I went Smile

P1nkHeartLovesCake · 21/03/2020 13:19

Sausages ( posh venison ones, all the butcher had left and supermarket was stripped of meat! )

Mash ( frozen mash as the supermarket was potato less, I mean you really couldn’t make this shit up)

Broccoli and carrots (that’s to M&S the only shop with fresh veg)

Will do some caramelised onions and gravy too

And once the dc are in bed Wine..lots and lots of wine

Crystal87 · 21/03/2020 13:57

Hi OP. I know how you feel as I've had to cancel mine. Well I've put it back till end of August and hoping for the best. We'll get the day that's meant for us and it all happens for a reason. As for food, probably breaded fish and peas.

YDYtrue · 21/03/2020 14:41

These all sound far too normal! Maybe in a week we’ll be on more wacky combinations.

@BlueMoonRising could you please substitute bruschetta for weetabix or something to make things more interesting?

Sorry to everyone else that has had to postpone weddings and other celebrations. Rubbish isn’t it?

That’s shit about your wedding. Not sure if my sister’s will be cancelled. Not at the moment but who knows where we’ll be in a few months.
I’m making slow cooker beef massaman curry. Had no issues finding coconut cream and potatoes surprisingly and the rest was already in.

Waitingforadulthood · 21/03/2020 15:23

We had cauliflower soup with pancetta crumbs for lunch and have spicach herb cous cous with marinaded lamb steaks for tea.

I'm incredibly lucky to live in a place that whilst not unaffected, (no toilet roll or liquid soaps etc) has relatively normal stocks of fresh food.

Although the lamb- that is an expensive treat because it was all the butcher had. Which leaves me sad as surely those before and after me who couldn't afford the couple of extra quid that lamb costs over chicken, will be going without.

Connie222 · 21/03/2020 15:25

Veg stew. Only veg I could find were leeks, carrots and potato. No bread but I found some dumplings in the freezer. Have made a while slow cooker full so will feed us all for three days.

mbosnz · 21/03/2020 16:28

Steak. Currently arguing whether we bbq it, or have it with a red wine jus and veges.

PurpleDaisies · 21/03/2020 16:31

Vegan chilli, rice and guacamole.

Fresh stuff is fine here.

SilverySurfer · 21/03/2020 16:45

Salmon - cooked in foil in the oven with saute potatoes, runner beans, carrots and peas. For pudding I'll have a large helping of chocolate and blood orange ice cream [drool] which came with my supermarket delivery earlier. I need a lock on the freezer so I don't eat the whole tub Grin

chocolatesaltyballs22 · 21/03/2020 16:47

So sorry about your wedding, I would be gutted. Our venue (got married 2 years ago) posted on FB that today's couple had had to cancel. I can't imagine how upset I'd have been if it had been me.

Anyhow... Dinner for us tonight is spaghetti with meatballs and home made tomato sauce. In fact I'd better get off the sofa and crack on with it soon!

CherryPavlova · 21/03/2020 16:51

Tagliatelle bolognese

Stillbloodyraining · 21/03/2020 16:53

Steak and burgers on the bbq here, with hassleback potatoes and some carrots and broccoli. Removing the burgers from the freezer has created space for the packet of mince I found in Lidl earlier.

ineedanotherholiday · 21/03/2020 17:00

Pancetta & spinach carbonara. Trying to use up the fresh stuff and not waste anything. Spent hours yesterday batch cooking with the fresh meat and veg.

TeaAndDarkToast · 21/03/2020 17:13

Left over roast chicken (yes we have a Mumsnet magic chicken make 5 portions) with steamed fresh sprouts and spring greens.

The cat has some tit bits from it too. Grin

PenguinsOnParade · 21/03/2020 17:15

Steak for me and DH, cheesy pasta for the kids. Only had two servings of each to use up so it worked out fine that way.

Mintjulia · 21/03/2020 17:15

Sausage & fennel risotto with saffron.

I don’t have any baked beans Smile

happypotamus · 21/03/2020 17:26

Some sort of veg curry. We've got veg, but there was no coconut milk, DH got curry sauce in a jar but it isn't vegan so he can't eat it. Going to investigate how to make it.

TwoZeroTwoZero · 21/03/2020 18:02

@happypotamus this is our veg curry. We used to use Quorn pieces but now use oomph chunks that are vegan (we're not vegan, or even veggie, but eat a few things that are).
