What’s for dinner?

Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

Homemade burgers with chips for DC. When DH gets home from the weekly shop it will be veggie burgers and sweet potato fries for us, with salad and coleslaw. Can’t wait!

mogloveseggs · 10/05/2020 13:40

Main meal at lunchtime today
Dc-chicken dippers, roast potatoes, carrots and broccoli as they don't like what we're having
Us-macaroni cheese with bacon and leeks and mustard in with the same veg

mbosnz · 10/05/2020 14:48

I missed a night!

Last night we did chicken fajitas - and amazingly the girls actually (okay, somewhat begrudgingly) said they did enjoy the, would like them again, and alright, all Mexican food is not the devils work. Dessert was an absolutely fabulous, stunningly perfect, Victorian sponge sandwich that child the youngest had baked. Gluten free, no less, and tasted absolutely no different from a not gluten free sponge.

Tonight is Roast Lamb, with all the trimmings and roasties, followed by molten chocolate puddings with whipped cream.

Then I may have to not eat for a week, or I'm not going to be able to get out the gate if and when lockdown ever ends!

Creamy mushroom and ham tagliatelle

HelenaJustina · 10/05/2020 15:12

We ate at about 2pm today (I was cooking surrounded by extremely hangry DC) as I got distracted painting with DH.

It was pasta, pesto, tender stem broccoli, green beans, sugar snap peas and baby corn, plus garlic bread and green salad and coleslaw.

Apple pie and custard for pudding and I won’t be catering again today!

Roast chicken followed by Oreo cheesecake

Saturday night, we BBQ'd. DH managed to get steak for us, and some chicken skewers for DD. DD made salads - she used up ALL the sweet potatoes making one (I had just bought 3 to replace the previous week's use, and she used them all at once when 1 would have been plenty!), and kept the other to a single tin of corn and 1 large tomato, and some red onion (but she's also flying through the tins of corn - I did manage to get a few more at the weekend TG). My contribution was marinading sausages that needed using up in the end of a bottle of BBQ marinade - we had those as starters.

DD also made desert - 3 individually baked brownies, with a scoop of vanilla ice cream and a sliced strawberry on the plate beside each one.

Yesterday's lunch was a packet of "mac'n'cheese" - the processed kind like you see on US tv. It was there "for an emergency", but wet and cold weather meant we wanted something hot and stodgy but fast. Ugh, I'd forgotten how bad it tastes!!

Last night, I used up the "mussels in white wine" that I'd found a couple of weeks ago in supermarket. I made a risotto with those, a handful of prawns from the freezer, and 4 scallops that were left in the fishmongers (end of the day, barely anything there). I usually use all fresh seafood but it was still nice enough this way.

Today is tuna (last piece from fishmongers was just about able to make 3 steaks - so he knocked a bit off the price! ), with potatoes (likely just boiled baby ones) and boiled carrots.

The rest of the week is storecupboard specials - involving chicken breasts and something Mexican-ish tomorrow, probably a tagine on Wednesday, and I don't know yet but have plenty to rummage through for Thursday.

Waxonwaxoff0 · 11/05/2020 10:24

We're having lamb koftas tonight with pita breads, dips and salad.

mbosnz · 11/05/2020 10:48

Tonight is poached chicken breasts, with new potatoes, asparagus, green beans, baby carrots, and broccoli.

Poor DD the younger is in bed with a sore tum', and this is always good for that.

EllaAlright · 11/05/2020 10:54

A gousto beef and green pepper stir fry. Gousto has been an absolute life saver during lockdown.

P1nkHeartLovesCake · 11/05/2020 13:30

Going to do Harrisa, sausage, lentil stew tonight with some home made bread ( that’s right people I’ve found flour!! Grin )

MintyCedric · 11/05/2020 18:39

Piri piri chicken, dirty rice, sweetcorn and roast tomatoes.

Ben & Jerry chocolate fudge for pud...a surprise treat for DD

drspouse · 12/05/2020 23:07

I have totally lost my cooking mojo (and even my eating mojo! Didn't fancy anything after tea tonight!).
DH did fish fingers/frozen salmon en croute for us, today. Pizza tomorrow. Or maybe a takeaway as I just CBA!

HelenaJustina · 13/05/2020 08:33

Last night was orzo with spinach and feta, but bland but used things that needed using up.
Tonight is soup and sourdough as I have a late meeting at work. DC will have pasta salad or couscous salad depending on which meets least opposition...

BiddyPop · 13/05/2020 09:57

DD made a "burrito bowl" type meal last night - chicken with fajita seasoning, beans and corn with other Mexican seasoning, leftover potatoes fried with "spice bag" seasoning and extra chilli, plain rice and the usual fixings on the table for everyone to fix their own. (Usual fixings meaning salsa, sour cream, guacamole, salad leaves, sliced tomatoes, grated cheese, etc).

Tonight, she is having a turkey stir fry, while DH and I have lamb shanks, potatoes, and cauliflower, with some defrosted cheese sauce.

Davros · 13/05/2020 10:46

Last night we had something I really love - pan fried salmon, new potatoes and green beans. Simple and very tasty, enhanced by the tarragon mayonnaise DH made himself.

P1nkHeartLovesCake · 13/05/2020 16:01

Steak and wine pie, chips, mushy peas tonight

onlyhereforthefood · 13/05/2020 16:11

We're making singapore noodles tonight with some wilting spring onions, some prawns and a wrinkly pepper I found.

MintyCedric · 13/05/2020 16:16

I bloody love Singapore noodles! Will have to have a go at making them myself as none of our local Chinese takeaways are open.

We're having homemade spinach and ricotta cannoli with salad and garlic and parmesan dough balls - special request from DD and a welcome change from spag bol or lasagne.

H1978 · 13/05/2020 16:17
